Skiers' French Toast

Reviewed: May 24, 2014
I made this recipe for a brunch for 8 people. The only changes I made, increase the amounts of everything by 1/2, broke the bread into chunks instead of slices and put it in a lasagne pan. Oh so delicious. I lined a large cookie sheet with parchment paper and turned the, Pam sprayed, pan onto the cookie sheet. I was quite surprised that it was NOT too sweet.

Old Fashioned Coconut Cream Pie

Reviewed: Feb. 10, 2014
This pie is outstanding. I wanted a larger pie so I increase all ingredients by 1/3 and added an extra egg. Used a 10 1/2 inch pie pan, I don't like frozen toppings, so I used whipped cream. Simply divine!

Mother's Lime Green Punch

Reviewed: Feb. 5, 2014
I have made this recipe several times and it disappears quickly. I have never added the almond extract and it is still delicious. I guess, I'll add it next time.

Cranberry Orange Bread with Greek Yogurt

Reviewed: Oct. 29, 2013
I need to make several dozen muffinns for an up coming Christmas bazaar, so I tried this.I turned this recipe into 12 delicious muffins. I did not add any nuts and they are not needed. I did not alter the recipe. I might add a little cinnamon-sugar mixture on the top the next time, before baking.

Berry Oatmeal Muffins

Reviewed: Oct. 11, 2013
I made a version of this recipe today, to freeze for an upcoming bazaar. I didn't have blueberries, so I used frozen raspberries. I didn't have wheat germ, so I used ground flax seed, (that could easily be an optional item). The topping really makes these , not too sweet, muffins, outstanding. I made a double batch and ended up with 22 muffins. This is definitely a keeper! Hopefully they will freeze well. They were nice and moist, delicious!

Delicious Raspberry Oatmeal Cookie Bars

Reviewed: Mar. 24, 2013
This is a wonderful recipe for a quick and tasty bar cookie. I have used raspberry, blackberry and apricot jam and they are all wonderful. I tend to get a little heavy handed with the jam. Always DELISH!

Amazing Pork Tenderloin in the Slow Cooker

Reviewed: Feb. 24, 2013
I served this recipe to dinner guests last night. I followed the recipe as written. While it was cooking, I was worried that the garlic was going to be too strong. My guests all gave it a" 10". I did brown the pork before putting it in the crock pot. My biggest hesitation about making this recipe, was using the crock pot method with such a fine cut of meat. No worry, It turned out wonderful

Pear and Blue Cheese Salad

Reviewed: Feb. 23, 2013
This is one of the best salads I have ever made. My husband and I both like the blue cheese. Some of our friends and family don't care for blue cheese so I switch to feta on those occasions. I often keep the dressing made ahead for other salads. It is best to have a firm but fully ripened pear. I use walnut oil but I feel sure any oil will work just fine.

German Apple Cake II

Reviewed: Oct. 13, 2012
I have been making this recipe for years. I make it all, except the frosting,in one bowl. Wet ingredients first, mix well, add dry ingredients, mix well, add apples, blend them in. It has never failed and is a family and friends favorite. I put the frosting on as soon as it comes out of the oven. I usually use Granny Smith apples but others work well. Dried cranberries or raisens added with the apples , 1/2 cup, is a very nive addition

Summer Tomato Pie

Reviewed: Sep. 2, 2012
Absolutely delicious and easy. I only made one change. I coated the prepared, cooled, crust with mayo. I have had other Tomato pies get a soggy crust. This might have helped, but, the pie didn't last long enought to find out. A real keeper for fresh tomatoes and basil.

Lemon Chicken Piccata

Reviewed: Nov. 29, 2011
Yum! I have been testing chicken recipes to use when I cater a Christmas party for 30 in two weeks. This recipe is the definite winner. The only change I made was to add flour to the pan drippings for thickening and doubled the sauce. I have prepared the chicken in advance and frozen it. I will make the sauce the day of the party.

Sausage, Peppers, Onions, and Potato Bake

Reviewed: Nov. 29, 2011
I doubled this recipe the first time I made it because I wanted left overs and because it sounded so delicious. I was NOT disappointed. I used herbes de Provence because that's what I had. I also used red and green peppers frozen from my garden. I did not saute the peppers, because they were already soft from freezing. OUTSTANDING!

I've made this recipe two ways. It is wonderful as written. The other way , I used applesauce for 2/3 of the oil. This is also delicious but took 10 minutes longer to bake.
