I made this for family and friends on New Year's Day and I have to say it was wonderful! I made it as written with 3 slight modifications: I used the juice from 2 cans of black-eyed peas and rinsed and drained the other two; added a pound of smoked sausage; and a sprinkle of cajun seasoning to taste. Reading other reviews, I did not saute the trinity but added it raw to the gumbo and by the time it simmered on the stove, the trinity was done. The rice was added 20 minutes before serving and it was perfectly cooked. Happy New Year!
