Zucchini Cakes

I LOVE LOVE LOVE this! There are so many ways to change this recipe, too, as desired! Sometimes I leave out the seafood seasoning and skip the crackers and bake the patties. The possibilities are endless!!! Sometimes I add shredded potato and carrots!

Easy and Delicious Chicken and Rice Casserole

This is an awesome versatile recipe as can be read from all the reviews. Some reviewers are truly over the top rating it only 4 stars [or less] because "they" are self proclaimed expert chefs who cannot be bothered with anything less than perfection and it is there way or no way. Use some thought and creativity and this dish, just the way it is presented is 100 % foolproof and delicious!!! Get creative and make it your own and you can improve on the already "5" star rating!!! Go, go, go!!! A+ all the way!!! All I can say is thanks so much J. Saunders!!! The best!!! And WHAH!!! to the reviewer who rated this low because the picture did not match the description! A quick easy meal that is also tasty is always appreciated by most folks who have to work for a living!!!

Tuna Melts

Really nice recipe that lends itself to lots of experimentation! Excellent as is! Personally, jalapenos might spice it up on some occassions, but not called for every time one makes this recipe. For my own self, I think this recipe is great, but would highly recommend cutting down on the mayo! I usually substitute yogurt for the mayo minus the whey for health food reasons and it turns out very good. A+++ and thanks so much for sharing this recipe!!!

Baked Mushrooms with Thyme and White Wine

Excellent! Enjoyed the flavors of the thyme with the portabello mushrooms we used (will also try it with morels)! Yes, I too, would prefer this sauteed, and I have enjoyed this dish both ways! But if you are looking to lose some pounds (as many of us are), or on a diet, baked is the way to go, and with the flavors of the spices, and truly to taste the mushrooms (I use portabellos or morels) this dish cannot be beat. With some ingenuity, anyone can enjoy this recipe as they see fit... But it is obvious to me that the author of this recipe was trying to put forth a very healthy, yet tasty recipe!

Slow Cooker Pierogie Casserole

These are AWESOME!!! A delicious recipe! I agree with the others, no slow cooker is needed, really, but it did allow us to get some stuff done before dinner. I am entertaining the idea of figuring out a way to allow this to cook all day in the slow cooker! All in all, this is delicious and can also be played with a bit to suit ones lifestyle. I understand why Joni says it is hard to not snack on it while it is cooking! Delicious! Thanks Joni!!!

Can't thank Lonbinder enough for this recipe. I have been looking for a good broccoli soup recipe for a long time! This is awesome and simple! And it appears to be versatile... but it was GREAT exactly as presented! Thanks!

Elephant Ears

Every year we have a fair here in town, and every year I say "We have got to get some elephant ears this year!" but somehow it never happens. I tried this recipe tonight and they are delicious... OK... keep trying to leave the kitchen, keep trying to leave the kitchen... walking away, coming back... Impossible to leave these alone! I wish I could substitute the shortening for oil, but the amount of shortening in this recipe is very minimal, and they sure are good!!! THUMBS UP!!!

Roasted Acorn Squash

My husband and I both thought this was outstanding, and that says a lot, because he can be quite difficult to please. I was looking for something healthy, not just another recipe for a butter/brown sugar mix to bake into the acorn squash. I wanted something that would enable us to not only taste the acorn squash, but to also try a dish that would enhance the flavor of the spices. Very good!!! Very flavorful and delicious and has the added bonus of being very healthy! I can also envision ways to prepare this to experiment with more flavors, but this is awesome as is! Thanks so much for sharing this, Jen! Great recipe!

Ravioli Soup

Love the flavors and versatility of this! You can make this and clean out your freezer if you like! However, as stated you will need to be creative, which is great, but maybe not for all cooks. For starters... 4 cups of water to boil 2 pounds of ravioli in? Not enough water, not even close, even as stated on the package directions for the frozen kind. No matter, but sliced carrots will generally take much longer to cook than five minutes... So the cooking times and amounts are off, but if you are creative, this can make an awesome delicious soup and a starter for many creative ventures : -) ! Tonight I tried to double the recipe, 8 cups of water in a chicken stock made of chicken breasts instead of the chicken bouillon, 1 pound of raviolli [just seems a lot more realistic to me], plus the spinach, a package of mushrooms and carrots boiled in the chicken stock... plus some frozen peas and other ingredients. Anyway you look at this... the recipe has some serious potential and is very delicious! Have fun, experiment and ENJOY!!!

This should get a much higher rating that 5 stars! Thanks so much for sharing this Lisa! Excellent! Absolutely delicious!!! The only thing I did differently was to add the spices at the end of the recipe, five minutes before serving, that way one gets the full flavor of the spices. Also, would not hurt at all to have a bit more rice, too... But just exactly the way this recipe is presented it is totally terrific!!! Thanks for sharing this one!!!

Crispy Eggplant with Spicy Tomato Sauce

Great recipe!!! I told my husband this was Eggplant Parmesan and he LOVED it! We both loved it! The only thing I did differently (and let me reiterate, it is great exactly as the recipe states) was that I took the sauce and covered the egg plant with it and then topped it with provolone cheese and cooked it for an additional 15 minutes. Either way... GOOD STUFF!!! The wheat germ is a GREAT idea!!! Thanks so much!

White Chili II

Love this! I was looking for a recipe for my leftover turkey from Thanksgiving. I looked over a lot of white chili recipes, but this one looked most intriguing the spices. We were NOT disappointed! This dish could almost convince me not to make beef chili again. I also love it because, like another reviewer stated, the recipe is very, very versatile! Thanks so much for sharing this Nancy!

Spaetzle, Sauerkraut and Sausage Casserole

This is DELICIOUS!!! Wonderful! I was just looking for a Kielbasa and Sauerkraut recipe. Made my own home made Sauerkraut last year, so looking to use some up and had some Polish sausage in the freezer, too. Made this, it is excellent! For the first try, I skipped the butter, apple and brown sugar because I was a little unsure about that. I didn't want to go for sweet right away. Now the next time I make this, I will try it with the apple, butter and brown sugar, maybe, because I think the flavors would blend famously! Excellent dish! Really happy I tried it! I will not here the Spaetzle was a new try for me, I have not made Spaetzle before, so I think it turned out but I will try other methods. Like I said, I hadn't made Spaetzle before so not sure what to expect. Just the same, it turned out great and the dinner was a hit with the family!!! :)

Spanish Rice II

This is the best Spanish Rice recipe I have ever tasted! I have made it quite a few times now and was surprised I had not already rated this! My husband and I are both quite crazy about it! It can also be quite versatile. Absolutely 5 STARS!

Cavatelli, Broccoli and Mushrooms

Like another reviewer stated, I absolutely LOVE the idea and flavor of broccoli and mushrooms! I LOVED this recipe, though I will be experimenting with it... I think it is very versatile. I had Rigatoni pasta in the house, and any good pasta like that will do, but the Cavatelli pasta is excellent. I used fresh mushroom, a whole package. I cut back on the butter to 2 Tablespoons and used minute amounts of oil as needed, everything sauteed nicely and came together nicely. I used fresh Parmesan. I did add some pepper, but since Parmasan already is salty, and we are cutting back on salt for health purposes, I did not add salt. I hope to play around with some more... I think it is wonderfully flavorful and HEALTHY!!! Karen, thanks so much for sharing this recipe!!! A+ all the way!

Eggplant Sandwiches

WOW!!! This is GREAT! The flavors all go so well together! I would give the a + 15 if I could! To the negative reviews on this recipe... I am having a great deal of trouble imagining how your eggplant slices came out to the consistency of guacamole. This sandwich could not be easier to make and it is delicious!

I LOVE these! I don't like to have too many sweets in the house, but we will be making these again! I used tender-crisp apples and the dish is a hit! Also, a bit too much filling, oh darn! I have to go get some more puff pasty! lol Love this!!!

Authentic Enchiladas Verdes

I love to try new things, but I am very fussy when it comes to the foods I truly love. I have had very few chicken enchiladas that I really like. We visited a restaurant in San Diego CA many years ago that had the most delicious chicken enchiladas, and I can tell you I have been disappointed with chicken enchiladas in nearly every other capacity since. Until I tried these! WOW!!! These are WONDERFUL! I have tried this recipe three times. It is divine every time! This is a keeper! If I could rate it 12 stars I would!!!! My husband loves these as well! In MHO it is best as is... I love to experiment, but the way this recipe is put together is truly the way to make it.
