Fresh Asparagus Soup

This soup was easy to make, had a wonderfully creamy consistency and tasted delicious. Be sure to cook the asparagus well to avoid "strings". I had rave reviews from my guests. I used low sodium veg broth and omitted the salt in the cooking but sprinkled some salt on the top after ladling the soup for those who had no problem with sodium. I didn't have plain yogert on hand so used lemon yogurt and omitted the lemon juice. As one of my guests was an "Asparagus Nut", I will be making this soup again, I am sure.

Perfect Apple Pie

This pie was delicious and looked spectacular with a lattace crust. First time I had tried a lattace top and it had to turn out perfect as I was making it for our Family Christmas Dinner. It didn't let us down. I changed nothing except for more water to make the pastry (8 tbsps.) and a sprinkling of sugar over the egg wash just before baking. Times and temperatures were also right on.

Crab Stuffed Chicken Breasts

If I could give more than 5 stars, I would! This tasted heavenly. I made only one chanage, that of fresh mushrooms. Everything else was done according to the recipe. There are few dishes that I really enjoy after doing all the cooking but this one was a delight to my taste buds. I had homemade coleslaw on the side and made pineapple sour cream pie for dessert. My guests were very appreciative of my efforts. Kudos to my friends at Allrecipes.

Best in Show Blackberry Cobbler

This was a delicious cobbler. I had many compliments from my guests. It gave a lovely presentation as well with ice cream. It dried out somewhat in the fridge overnight despite being covered but a little warming in the microwave and it was again moist and delicious. Can't think of any changes I would make.

Blackberry Cobbler II

The cobbler itself was absolutely delicious, warm with some ice cream but Holly Cow, $12.00 for out-of-season blackberries. I don't think I'll try this recipe again until our Okanagan Valley blackberries are ready.

Cranberry Orange Bread

I was looking for an alternative to my Banana Nut Bread and this is it. A tasty addition with the following changes: 1/2 tesp. baking soda, pinch of salt, 1 1/2 cups sugar, 1 med. naval orange, used all zest instead of extract, peeled and cut up to same size as dried cranberries and only used 1 cup of the cranberries, also 2 tesp. vanilla as I always double vanilla in all recipes and finally 1/2 cup of sour cream 'cause that's all I had. Baked in two loaf pans for 50 mins. and it is totally awesome. Moist and delicious and one flavour doess not overpower any other. It's wonderful! This is in my recipe box with a star on it!!

Chocolate Tapioca Pudding

We enjoyed this pudding a lot. A nice texture with the tapioca in it and plenty of chocolate flavour to tame even the worst "chocolate craving". It's nice to make a pudding that doesn't come in a box!

Peach Pound Cake

I made this with 1 1/2 cups of sugar & a brown sugar/chopped pecan layer. With fresh peaches right from the orchard, it was delicious even with less sugar.

Blueberry Sour Cream Coffee Cake

This cake was delicious & had a nice, dense texture. I cut the sugar to 1 1/2 c. & added more blueberries 1 1/2 c. Unhealthy, yes, but I will be making this again.

Death By Chocolate II

This is pretty well my Death by Chocolate recipe except I use Kahlua instead of coffee liqueur and Skor chocolate bars. I also add zest of one orange to pudding, add a layer of canned mandarine orange & top with mandarines. It's yummy!

Baked Custard

I liked this custard very much. It wasn't overly sweet as I rarely eat desserts. I doubled the vanilla as I do in all recipies calling for vanilla and it was perfect. Lots of nutmeg too. Will make these again.

Phoenician's Key Lime Pie

A very tasty pie but I didn't think the toasted almonds in the crust made much of a difference considering all the extra work. I found the amount of lime flavour to be just right and increased after 2 nights in the fridge. I did get rave reviews from my 2 guests who had never tasted key lime pie before.

Gramma's Apple Bread Pudding

I just made this pudding and it is delicious. The apples really set off the flavour. Of course I doubled the vanilla but what was with the 1/2 cup of margarine in the sauce. It all separated so I poured off the butter which floated to the top and the sauce was just fine after that. Very good recipe.

Grandmas Bogie's Parmesan Chicken

This dish was good but just seemed to lack flavour. I tried it again over rice and it was better. It definitely needed a sauce so to a white sauce I added diced tomatoe, sauteed garlic & onion and some tomatoe juice to give it a nice colour.

White Chocolate Orange Cookies

I enjoyed the flavour. I have always loved the combination of orange and chocolate but I found that there was too much flour and the presentation was not pleasing (pale)so, I will make the following changes next time. I will omit the white sugar and increase brown sugar to 1 1/2 cups, use the zest of a whole orange plus the juice of half the orange. I will cut the flour to 2 cups, add a tespoon of ginger and use semi-sweet choc. chips (personal preference). I also will baked at 375 F for 7-9 minutes for slightly crispier outer 'crust' while maintaining a chewy interior.

Too Much Chocolate Cake

This cake, although super moist, was so rich it upset my stomach. I should never have put a glaze on it as it just added to the sickly sweetness. If I ever tackle this again, I will reduce the chocolate chips to 1/2 cup and just dust the top with confectioners' sugar & serve with a small scoop of ice cream. I would also recommend to use 'no fat' ingredients where ever possible.
