Chocolate Chip Banana Bread II

This recipe is so YUMMY!! I used half of the recipe in a 9x5 loaf pan & used the the half to make muffins [made about 14 muffins]. I used butter instead of shortening, added a dash of vanilla extract & sprinkled a bit of cinnamon in to the mix, & also left out the walnuts. The taste was PERFECT! So moist! Will definitely make this again & again! *Have added a picture - #10 picture

Apple Squares

I followed the recipe exactly, and the bars tasted great, but definitely needs a few tweeks! When I bake again [and I definitely would bake again!] I will DOUBLE the apples as well as used less cinnamon. The cinnamon called to sprinkle on top at end is a bit overwhelming, and I actually brushed a lot of it off once out of oven because it was too much. I would do 1 TBSP of sugar & 1/2 tsp of cinnamon.

Cornish Game Hens with Garlic and Rosemary

I had never made cornish hens, but decided to venture out & make them for Valentines Dinner earlier this week. WOW! My husband & I LOVED this recipe! I only made 2 hens, but followed all measurements of the original recipe. I made a few additional tweaks as follows: 1. I brined the hens for 2 hours prior to baking. I soaked them in chicken broth, water, red wine vinegar, white rice vinegar, spoonful of brown sugar, little honey [I just eye-balled all of these ... can't really go wrong!] 2. Sprayed bottom of pan with cooking spray so garlic cloves wouldn't burn 3. Put 4-5 garlic cloves inside of hen cavities [as well as around outside] 4. Brushed melted butter on skin 5. Sprinkled garlic & onion powder on skin 5. Baked 30 minutes at 450 [instead of 25 min] & baked 35 minutes at 350 [instead of 25 min] These turned out GREAT! I will definitely make again! Highly recommend giving it a try! :)

Crepes

I made these crepes for Valentines breakfast for my hubby ... WOW! So good! They were so quick & easy! I added a cap full of vanilla & a few dashes of cinnamon for some added flavor. I didn't have any berries in the house, so I just made banana crepes...heart-shaped banana crepes to be exact! [photos #23 up top]. For filling I mixed together Cool Whip, sour cream & softened cream cheese. Unfortunately, I just did this by eye & taste, so I don't have exact measurements...but so YUM! I just smoothed the mixture into middle of crepe, placed a few banana slices on top & rolled it up. Topped it off with a dollop of Cool Whip & heart-shaped banana slice on top. EXCELLENT!
