Thanksgiving Corn Pudding

Delicious! For the reviewers who said it's too sweet...it is called "pudding" so expect it to be sweet. Don't leave off the topping. I cooked mine in a 9x9 casserole dish and left it in until it looked good and set. Yummy! My kids loved it.

Rick's Special Buttercream Frosting

Usually I'm not a fan of buttercream frosting because of the texture. This buttercream is AMAZING! Smoothe, fluffy, and great tasting. I used just butter (no shortening) and only 6 cups of powdered sugar. Not too sweet with no salt added. This recipe makes a ton. Half a batch easily frosted. 5 dozen Chritmas cookies.

To Die For Blueberry Muffins

I have tried a ton of blueberry muffin recipes and this one tops them all. My family loved them! I made the recipe exactly as stated but added a tsp of vanilla and a touch more milk because the batter seemed too thick. Delicious!

Fluffy Peanut Butter Frosting

I don't know what happened with my first batch of this frosting. The recipe said to beat for 3 minutes to make it fluffy but the longer I beat it the worse it got. It looked like it was separating into oil, milk and peanut butter. Very strange. The taste was fine and hated to throw away so I scooped out the insides of my cupcakes and used it as a filling. Made a second batch and didn't mix as long then piped it on filled cupcakes. Kids loved the filled cupcakes so some good came of the first flop of the frosting.

Big Al's K.C. Bar-B-Q Sauce

Love this recipe! I made it exactly as directed and can't find a flaw in it. The flavors and thickness definately increase the longer it simmers and I let it go for a good long time. It was superb on pulled pork and my son insisted it tastes almost exactly like Sweet Baby Rays. The recipe as written makes about a quart and a half of sauce. Not realizing that, I doubled it and ended up with 3 quarts. No worries though...just put in quart jars and refrigerated for later use.

Ghirardelli® Triple Chocolate Truffle Cake

Anyone else have a problem with spots of "something" inside the cake after it's baked? Mine tasted great and baked up nicely but it had small globs of something all through it. They didn't taste bad and if you squished them between your fingers they spread around easily but I have no idea what they would have been. Eggs maybe? Just can't see how the eggs wouldn't have gotten mixed in well. Anyway, the cake is great and the ganache is easy and amazing as well.

Raspberry Sour Cream Pie

Found this recipe yesterday and made it today. What a hit with the family! I used a bag of frozen raspberries (2.5 cups) for one pie and the amount of berries for the filling was just right. Made a second pie with fresh peaches and added a sprinkle of cinnamon and nutmeg to the filling. Just as delicious as the raspberry. Thinking rhubarb might be good as well.

Chocolate Cakes with Liquid Centers

WOW! WOW! WOW! I made these for my kids when the hubby wasn't home then had to make more so that they could have a second one and he could try them. AMAZING and really quite easy. I didn't have bittersweet chocolate so just used semisweet and they turned out great. The first batch I baked for 10 minutes (after reading some other reviews) and they were just too done in the middle and didn't have liquid centers. The second batch I baked for the time given in the original recipe and they were perfect. My husband said that I should feel free to make them again any time! I didn't have any custard cups so I just used a muffin pan and they still came out great. To unmold them I just placed a cookie sheet upside down on top of the muffin pan and then flipped both pans together. Worked like a charm.

Yum!Yum!Yum! My kids said "mom, those fudgy balls are delicious!" Definately read other reviews and follow their tips. I used Nestle baking cocoa powder and they turned out great. Not too chocolatey and not too sweet. My kids liked the balls rolled in crushed graham crackers or powdered sugar best. They decided they did not like the ones rolled in regular sugar because they didn't like the gritty feeling while chewing the sugar. They are going to school for a Valentine's day party so we made them for a trial run. So easy that we will without a doubt be making them again.

Chocolate Zucchini Muffins

My kids loved these muffins! I added chocolate chips, peanut butter chips, and a streussel topping and they were great. Nice and moist. Even my husband liked them and he won't eat any other zucchini bread.
