Mom's Best Waffles

If your goal is to make a waffle that is only "better than a mix," then I'm sure these may qualify. But when compared to other "from scratch" recipes that are just as easy to make, this recipe yields dry, tough, and limp waffles. They were helplessly pathetic little creatures that cried out, wanting to be put out of their misery. It was necessary to smother them with heaping amounts of butter and maple syrup in order to help them slide down my throat easier. Thanks for the recipe but I think we'll pass.

World's Best Lasagna

A great recipe- easy to make and simple ingredients, and so flavorful! The texture was wonderful, with the perfect amount of moisture. I doubled the garlic and would even add more next time. Also added extra mozzarella & parmesan cheese and only used 1/4 tsp fennel seeds. Perfect! Everyone loved it. This is a GREAT staple lasagna recipe.

Upside-Down Coffee Cake

Wow- sugar overload!! Don't get me wrong, I have a serious sweet tooth, but this was out of control. I followed direction to the "T" but it turned out funky. The butter/brown sugar sauce on the bottom called for too much brown sugar, or not enough butter. The result was an overly sweet, gritty caramel sauce instead of the desired "gooey" sauce. And in my opinion this flavor did not at all compliment the peaches or the cinnamon flavored cake. I served it at a family get-together and people commented that it was as if they were eating two different desserts- a spiced cake and a caramel dessert- in one. The cake went almost untouched, which is unheard of in my family!

Grandmother's Buttermilk Cornbread

OK flavor but turned out slightly dry (and I did NOT over-bake them). Surprised, given the high rating. Added some shredded sharp cheddar to the batter, which I'd recommend for savoriness.

Pumpkin Chocolate Chip Muffins

I found these muffins bland, even after I substituted brown sugar for white, increased pumpkin to 1 c., and doubled the cinnamon and nutmeg. I'll try a different recipe next time. To each her own I guess...

Old Fashioned Coconut Cream Pie

I was disappointed after reading all the rave reviews. My filling turned out floury-tasting and had a grainy texture, despite the proper cooking temp and time. Also, not enough coconut flavor. Next time I'd definitely use corn starch and increase the coconut and/or use some coconut milk.
