Skillet Ham, Cabbage and Potatoes
Yummy! I also followed the suggestions of others... chicken broth instead of water, and added ground mustard and garlic salt to the list of spices. I cooked the potatoes and ham with the onions in the skillet before adding liquid,and nothing came out mushy. I also used pre-boiled red cabbage which turns purple when you cook it and it made quite a stunning dish!

Tex-Mex Turkey Soup
This is a fantastic way to use the leftover carcass of your Thanksgiving turkey, and it makes for a better soup. Boil down the carcass with a chopped onion, a bay leaf, salt, & a wedge of lime (the acid helps extract the calcium from the bones). Put this through a strainer to get your 4 cups of broth, and substitute this broth for the 4 cups of water and 3 boullion cubes. The boiled carcass is also a frugal source for your 4 cups of shredded turkey. And I add a wedge of lime to the list of toppings... a little squirt of lime juice goes perfectly with these Tex-Mex flavors.
