Nana Dot's Irish Soda Bread

I had trouble getting the dried fruit to stick in the batter, and the baked loaves were a little delicate, but the texture and taste are fantastic! I also needed to add some time to the end of cooking—maybe ten minutes.

Chocolate Beer Cupcakes With Whiskey Filling And Irish Cream Icing

The cake is delicious. I didn't have sour cream, so I used a toasted vanilla coconut full fat Greek yogurt. That was my only modification to the cake. I did not make the center this time around - didn't have any whiskey (blasphemy, I know!). Next time I will try to get my hands on some. The frosting recipe made enough for all of my cupcakes and then some. It was very sweet so I only put a thin layer on the tops, but it was thick enough that you couldn't see cupcake underneath. I was a little disappointed because I read the reviews saying there wasn't enough for all the cakes, and was looking forward to some unfrosted cakes. The only change I made was to add enough Irish cream to make it smooth, maybe a splash or two more. FYI, these cakes expanded a lot in the oven. If you are using cupcake liners on a regular baking sheet, err on the side of caution and leave a good amount of room between the cakes.

Vanilla Glazed Carrots

Horseradish Corn on the Cob

Delicious but not overpowering on fresh sweet corn. Paired well with a cheesy potato, chicken, and broccoli bake. I was able to have both parts of the meal in the oven at the same time!

Fluffy Peanut Butter Frosting

I halved this recipe and it covered exactly two dozen cupcakes. I did not need to use any milk; it mixed up fine without it. This was the perfect complement for some banana and banana/Nutella cupcakes I made. Another reviewer complained about the color being unattractive, but it went well with the lighter colored cake and a pastel wrapper. It was not too peanut buttery, nor was it too sweet. It also kept fine for days on the cupcakes at room temperature without any drying or molding.

Oatmeal Pancakes

This review is for the syrup only: The syrup was very good. I used it with a different oatmeal pancake recipe that I know my picky husband likes (Oatmeal Pancakes II). It made the pancakes taste like buttery, sugary "Christmas cookies." My husband didn't like it because he found it too sweet. When I removed the sugar mixture from heat and added the buttermilk, the two had an almost explosive reaction where the milk splattered all over and the sugar mixture solidified. I wound up bringing it back to a boil to melt the carmel back down, and it was fine.

Papa Drexler's Bavarian Pretzels

These were great as pretzel buns for burgers. Used the recipe as written but rolled the 6 "ropes" into spirals. I had to smoosh them down a bit while they were cooling but they were perfect for the purpose. They made 3 total "buns" (6 circular pretzels). If you do this, make sure you pinch the end of the rope to the body of the spiral, or it might start to unravel. Cheers!

Old Fashioned Pineapple Upside-Down Cake

This came out fabulous! I used a 13x9" pan. My only changes were adding a bit of reserved pineapple juice and using regular all-purpose flower because I didn't have cake flower. I also added walnuts around the pineapples. Because of the size of the pan, it was a very "short" cake. It did not rise much if at all while baking. The flour I used might have also contributed. Because of the added juice, it was hard to tell that the cake was done baking because it was bubbling. I baked it an extra 10 or 15 minutes, but it was not overcooked. This was fantastic. It was a lot more complex than anything I usually bake, but it was well worth the work. It was just as good as the cake my grandma used to make, and she made the best pineapple upside down cake I've ever eaten. Thank you for this recipe!!

Chicken Enchilada Casserole II

I made this last night, and my husband said it was the best thing he's ever eaten, including food from fancy restaurants. He said he's never been more satisfied with a meal (and he is a picky eater). He told me that if I kept up this quality of cooking he wouldn't have to fire me. XD I did make some changes, but I am reviewing this recipe because I owe all of the credit to the base recipe: I nixed the sour cream, used black beans instead of chili beans, used white corn chips instead of flour tortillas, and cooked the chicken in a jalapeno taco seasoning. I used a Mexican cheese mix in half the quantity the recipe called for, and I added some fresh spinach in the middle for color. I served it with Goya refried red beans and fresh, homemade lime soda (1 bottle club soda, juice of 1.5 limes, 1/2 cup sugar). 'Twas nommy and healthy, minus the sodium content which was definitely through the roof. I am heavy-handed and was only able to divide the ingredients into two layers, but it didn't change the taste at all, I'm sure. (=
