Chicken and Rice Casserole I

The only change I made was to sprinkle the chicken breasts with basil before pouring the mushroom soup mixture over them. I love how easy it was to throw everyting together. It hit the spot on a cool rainy day.

Chocolate Truffle Cookies with Sea Salt

HEAVENLY!! These cookies are simply perfect. The only changes I made was omitting the sea salt and chilling them for 30 minutes or longer. I had no problems with the consistency of the cookie batter. By far my most favorite cookie now; hard to stop after eating just one.

Easy Honey Mustard Mozzarella Chicken

I don't think I can ever go back to regular barbeque sauce after making this. I added some spices to the chicken before wrapping it with the bacon and did put it in the broiler after 30 minutes or so so the bacon would get crispy. I also added some spicy brown mustard in with regular mustard. I also saved any leftover BBQ sauce to use with other meats during the week.

Beef Nacho Casserole

I used a packet of taco seasoning and some chili powder. I also used about 1-1.5 Tablespoons of miracle whip and 1/2 cup of sourcream. For the cheese, I used whatever we had on hand, and for the chips I used cheese flavored tortilla chips. I put mine in a small baking dish instead of a casserole dish and baked it for only about ten minutes or so cuz the chips started to get too dark.

Feta and Bacon Stuffed Chicken with Onion Mashed Potatoes

This was a hit!! I used reduced fat Feta cheese, 1 tablespoon of oregano, and crackers mixed with garlic salt instead of breadcrumbs. I baked it in a 9X13 pan for 45 minutes in the oven instead of frying the chicken.

Chicken Cordon Bleu-ish Grilled Sandwich

My family LOVED this. My girls asked if we could have it again. It was so quick and easy to make. I used a thick piece of Italian bread being as the chicken was thick. I also sliced the chicken breast so it would fit better on the bread.
