Turned out Fantastic! even my boyfriend who is not a huge pumpkin fan said it was great and got seconds!. I omitted the red onion, instead of half and half I used fat free sour cream and 4 oz cream cheese instead of the goat cheese. stir frequently! I also used ricotta ravioli instead of spaghetti

Pumpkin Chocolate Chip Cookies III

I added 1/2 cup extra pumpkin, used applesauce instead of oil, and added 1 teaspoon nutmeg. They were all gone before I could even get them off the baking sheets! Huge hit! Great cake texture, I would definantly make sure you have milk around to drink and some frosting on top never hurts!
