Curried Coconut Chicken

I will make this again simply for it's ease and convenience. This did not taste like a typical, say, Thai cuisine at all. I think that you should either lay off the tomato sauce or perhaps add more coconut milk to tame the acidity. I will try to add more milk next time to see if it goes better. My husband and oldest child like it enough for seconds but it wasn't amazing!

Quick and Easy Alfredo Sauce

So I was really desperate to make pasta alfredo for a quick easy meal for myself and 4 small children. I've used this before and it has always pleased my, however, I DID NOT HAVE ANY PARMESAN CHEESE!! Oh the horror! lol. I even asked my neighbors but to no avail. However, it still turned out ok. Just so you know. :)

Pam's BBQ Flat Jacks

I thought this was pretty good for a quick, easy last minute meal. There were a few changes made based on availability and interests of all ;) I used 1 lb of ground beef, onion powder instead of onions for kids' sake, added garlic powder as well. I took the advice as another reviewer and baked the biscuits first ( 3 min.) then added the ground beef mixture (used Bullseye Hickory smoked BBQ sauce as well as a little New Braunfels Smokehouse Texas bbq sauce). I used about 4 slices american cheese cut up in 3 smaller pieces each and laid over meat mixture evenly, as well as added about 1/2 cup mozzarella cheese as this was all the cheese we had on hand. Baked for 15 minutes. Biscuits were perfectly cooked and the dish overall tasted well put together. I will definitely make this again! 2 kids like it, 2 others didn't :)

Cheddar Baked Chicken

I followed the recipe almost to a "T". I took some of the reviewers' ideas in just spraying the dish, not adding butter except a little on top. I only added about 2 tbsps. Also, I only had plain bread crumbs, so I eye balled how much Italian seasoning to the cheese and breading mixture. It turned out really good! Very tender, juicy and still crunchy. Little to no sogginess on the bottom. Will def make again.

Mama's Potato Salad

i have never made potato salad before and it turned out pretty stinkin good. my 5 yo. love it. and my husband thought it was great. i didn't add horseradish sauce but I DID add the pickles! mmm mmm good!

Pumpkin Pancakes

I was trying to find something to make for breakfast knowing we had very little food left in the house. I didn't have any regular white sugar, so I thought all hope was lost. However, I reluctantly looked up this recipe and saw that I had everything listed to make these pancakes! They turned out VERY good!! the kids inhaled them w/o any syrup or honey on top. Definitely a keeper recipe!!!

Bread Pudding II

My MIL is dominican and I thought she made the best bread pudding ever...until.....this one!! lol My husband made one batch with Craisins instead of raisins. Oh...my....gosh!! Excellent! So good, in fact, we made another dish the next day (since the first one was gone in one night :-) ) but this time we used crushed walnuts for a bottom layer crust, shredded coconut, and vanilla flavored granola! Again, another WOW!! We did have my MIL taste the first batch and she was pretty impressed to say the least.
