About this Cook
I'm a twenty-someting new mom. I believe good food doesn't have to be complicated. Making food ahead and freezing for later are almost a neccesity here in Texas due to the heat; not to mention the time nad money I can save to spend with my family. I and my husband both love cooking and trying new things. Friends and family always enjoy being our guests at dinnertime!
My favorite things to cook
Tex-mex anything; chili at least once a week; pasta; classic southern dishes. I'm the kind of gal who isn't afraid to add bacon to a veggie burger with sprouts and avocado. I love baking brownies, cookies, and especially cobblers.
My favorite family cooking traditions
I've been baking since I was 12, and at Thanksgiving my family always requested my signature brownies. Few things more special than originating a new family tradition.
My cooking triumphs
Any time someone smells what I'm cooking and I see their face brighten.
My cooking tragedies
One of my major regrets in life is that I didn't learn the joy of freezing dinners nad desserts sooner in my life; especially in college.

Broccoli Cheese Soup V
Break out your big pot for this one: I halved it per advice of previous posts and it still made a quart and a half! I used 1 1/2 large heads of fresh broccoli and 1/2 lb. of Velveeta with 1/2 lb. of grated sharp cheddar. My only complaint about this soup is that I wish I'd left out the onion and perhaps added a dash of onion powder instead. If you're looking for a soup to hold you over until your next Jason's Deli fix, this will do it. I will definately make this again and recommend it to friends.

Mock Chicken Fried Steak
I followed this recipe with following exceptions: I ran out of crackers so I used cornflakes for the outer crust. Also, I cooked each sid eonly 3-4 minutes and it was well done. I served this the first time with mashed potatoes and cream of mushroom for gravy. This recipe warmed up well out of the fridge and served again with corn and green beans. Very filling and husband pleasing, had everything on hand, will definately make again.
