Spaghetti Squash Tacos
First time cooking with spaghetti squash & thought this might make for an interesting meal. Psuedo tacos may not have been the best way to first experience this vegetable; which I will defintely cook again as a side dish. As tacos it was only OK. I should have used my own seasoning instead of the packaged taco seasoning (which taste like Taco Bell...blah!). It was easy enough; the hardest part was cutting the squash (thank goodness for the internet). We did eat it all but this will never be a family favorite.

Bacon Horseradish Dip
Probably will never make this again. Made the dip according to the recipe. Tasted like sour cream & lemon. Added more horseradish & garlic powder. Not much improvement. Added the bacon (2x what the recipe called for) & refrigerated (hoping the flavors would blend). Not much improvement...and couldn't taste the bacon at all. Very disappointed.

Baked Kale Chips
Tried a different recipe on my first attempt at kale chips. This recipe is much better. I washed the kale the night before & left it to air dry on the counter (from the 1st attempt I realized the kale has to be as dry as possible). Then the next day I trimed & cut it to size. Sprayed it with olive oil (using an oil spritzer) instead of drizzling with the oil; this coats the kale evenly. Used a whole kale bunch and cooked them in three batches.
