Stuffed Zucchini

Made this with a monster zucchini from my garden. I don't eat a lot of ground meat, so substituted chicken, added Italian seasoning,toasted onion rolls made bread crumbs, and Asiago cheese. Excellent meal!

Baked Teriyaki Chicken

Kabob Marinade

I used this recipe for hog, beef, chicken, and venison kabobs. It was absolutely DELICIOUS! Everyone who ate said all the meat was flavorful and tender. They keep asking for the kabobs again! Only problem is I need another hog!!!! Zucchini, squash, onions, cherry tomatoes were excellent in the marinade as well!!! I use this as my go-to marinade.

Low Fat Chicken Tostadas

I really liked this recipe. I was looking for something to use the cilantro lime chicken breast (from this site) in. Added black olives , cumin, garlic, a sprinkle of red pepper flakes, and black beans and paired it with the cucumber salad from this site. What a great lite meal for a warm evening!

Shannon's Lower Fat Chile Relleno

This was a great recipe to start with. I made a few changes and will definitely make it again! I used poblano peppers and stuffed them with tomatoes with chilies, onions, garlic fresh basil, oregano, and cilantro, and mozzarella cheese. I used bread crumbs instead of corn meal and put remaining stuffing on the top of the chicken breasts. Paired it with a spicy cucumber salad. Good the 1st night, but even better as left overs!

Green Bean Fries

These were terrific! I used Italian bread crumbs and a handful of Parmesan cheese to coat. Fried them lightly, and I got about 10 of them. My DH ate the rest! Am planning to make them tonight with tequila shrimp and spinach salad. Won't make the mistake of letting him go first, though!!!

Quick And Easy Mexican Chicken

This was an excellent starter for dinner. I have to watch the fats and sodium in my diet due to health concerns, so I made a few changes. I cooked mine start to finish in my cast iron skillet and it turned out great!I ended up liberally seasoning the chicken breasts with garlic powder,white pepper,cumin, and a pinch of sea salt.I browned the chicken in a tad of olive oil and removed form the pan. I deglazed the skillet with margarita /tequilla. I sliced a red and white onion, red bell pepper, cilantro and 3 cloves of garlic and cooked them for 5 minutes or so until the onions were somewhat transparent. Returned the chicken to the pan, covered with homemade salsa and a little more cilantro, and baked in the oven for about 30 minutes. About the last 10 minutes, I added 1/2 cup of low fat cheddar and baked the last few minutes. I served it over rice. WAS IT EVER GOOD! I will be making this again!

Pizza Crust Fantastico

This was an extremely simple recipe, and very tasty. My DH and I have very different diets, so I made 6 small pizza rounds that we could top per our tastes/dietary restrictions. The 3 that weren't used are waiting for the next pizza night in the freezer(pre-baked, of course!)

Grilled Chicken Burgers

LOVE THESE! Since having to watch fats, I find myself dying for a hamburger. These were the solution! DH turned his nose up at them when he saw the ground chicken. After the grilling, though, he devoured them! Planned to take them to the fishcamp this weekend but only had 2 left! Very goo recipe! Will definitely make these again!!!!
