BBQ Chili Pasta

Reviewed: Sep. 28, 2010
I'm not going to lie - when I first typed in the ingredients I had in my cupboard and this came up, I actually thought it sounded pretty disgusting. But I gave it a whirl since it had bbq sauce in it, and I knew the hubs would probably like that. I was amazed at how delicious it was. I'm not one for too spicy, and I thought the chili powder was just perfect. Will definitely be making this one again.

Artichoke Spinach Lasagna

Reviewed: Jul. 26, 2010
HUGE hit in our family!! My usually meat-loving husband coudn't stop raving about this dish, and begged me to make it a second time in just one week. Definitely a keeper!

Lemon Rosemary Salmon

Reviewed: Sep. 28, 2010
Had the in-laws over for dinner and tried this recipe out and everyone loved it! I'm a fan of rosemary, so I put four or five sprigs of rosemary underneath the fillet and then finely chopped two more sprigs, mixed it with the olive oil and sea salt and then spread that on top of the fillet. Will definitely be making this recipe several times over.

Awesome Slow Cooker Pot Roast

Reviewed: Oct. 3, 2010
Loved this recipe!! It smelled so delicious cooking all day, and was a perfect meal for a cool fall day. Used a little flour as suggested to thicken it up, and also put it over carrots, potatoes and onion. Will definitely be making this recipe over and over throughout the next several months.

Spinach Stuffed Chicken Breasts

Reviewed: Nov. 5, 2010
So delicious!!! Made this tonight for my husband and I, and he asked if I'd make it next week when his parents are over. We literally talked about how good it was in between every bite. Only used two chicken breasts, but left everything else the same and then poured the remaining ingredients over the chicken breasts. We also skipped the bacon, but it still tasted wonderful.

Crunchy No-Fry Chicken

Reviewed: Apr. 5, 2011
For how easy, cheap and quick to prepare this recipe is, it is definitely worthy of a five star rating. I added some italian seasoning as another had mentioned, and it was so good! Will definitely be adding this to the dinner rotation.

Chicken Enchiladas V

Reviewed: Sep. 28, 2011
This was delicious! I also used a big can of green enchilada sauce and splashed a little bit in the pan before adding the enchiladas, and then poured the rest of it over them. Definitely a keeper.

Spinach Enchiladas Verde

Reviewed: Aug. 11, 2010
These were delicious! I covered the enchiladas with a small can of green enchilada sauce and they turned out perfect. I took the recommendation to mircowave the corn tortillas with a small glass of water, and that defintiely helped to soften them up. Definitely a repeat.

Creamed Cucumber Slices

Reviewed: Aug. 26, 2010
So light and refreshing. Used two cucumbers instead of one, 3/4 cup of miracle whip instead of a full cup of mayo and added a little dill as a few others had suggested. Also added a bit more vinegar. Delish! Still had more than enough sauce.

Avocado Chicken Wraps

Reviewed: Aug. 27, 2010
This was delicious but messy, and hard to get the wraps to keep their shape. I used 1/2 cup black bean and corn salsa, added 1/3 cup black beans and then served it as a dip with tortilla chips the second time around. Everyone loved it.
