I thought these enchiladas were good and easy to make. The chopped green chilies gave it the right amount of heat. I did add a red enchilada sauce, as others had suggested, but I think the green would have been better. I only got 7 enchiladas out of the mixture, but then again, I wasn't measuring it into the tortillas, just spooning in what looked like a good amount. Next time I will most likely reduce the amounts of sour cream, cream of chicken soup and cheese by about half and add more chicken to make it a little less creamy.
