Fluffy Pancakes

These are the fluffiest pancakes I've ever made! I've tried several recipes, but they always seem to end up flat. Didn't even have to let them sit for 20 - 30 minutes! I doubled the recipe, and used only half of the vinegar called for in the recipe to sour the milk. Had some left over, and they warmed up nicely in the toaster the next day. This will be my go-to pancake recipe from now on.

Best Brownies

I have made this recipe twice in 4 days! Doubled it, mixed by hand, and baked in a 9 x 13 pan ~ both times I tested with a knife, which came out clean at 25 minutes. I read another review that said to leave an egg out when doubling the recipe. I followed the recipe to a T ~ PERFECT!!! Haven't tried the frosting yet. Second time I made them I added Reese's Pieces ~ YUM! I doubt I will ever try another recipe.

No Roll Pie Crust II

This is the best pie crust I've ever made, and the easiest to boot! My hubby was also impressed! I must say not the nicest looking, though. I'd much rather eat a great tasting pie than a pretty one! =o)

Dutch Apple Pie

This was wonderful! It's been 8 years since I've made an apple pie because Hubby doesn't like them. My niece and I decided to bake one. My non-apple- pie-eater couldn't resist and really enjoyed this! I added a little bit more flour in with the sugar/cinnamon mixture as well as a little bit of ground tapioca. I also brushed egg on the crust first ~ just to be on the safe side. :o) I wasn't sure how the topping would turn out as it just didn't seem right. I added a tblspn more each of sugar and flour. Maybe it was because my butter was cold. I don't know, but it turned out great!

Coconut Cream Pie VI

Coconut Cream Pie is my husband's favorite pie, and he's so particular about it that he would only eat it at a restaurant we went to. Since I have found this recipe he has been ecstatic because he now can enjoy his favorite pie at home! It turned out great and was delicious!!! A keeper! I used the French Pastry Pie Crust and just halved the recipe, so I only had one pie crust. A fabulous combination!

Award Winning Soft Chocolate Chip Cookies

These are a BIG HIT! My husband is very particular about chocolate chip cookies, and so wasn't too sure about these at first. A couple hours later I noticed they had already started to disappear, and he admitted that they were probably the best chocolate chip cookies he had ever had. Even my 11 year old brother-in-law who doesn't like cookies helped himself to quite a few! These were gone in a few days. I used 2 cups of semi-sweet chocolate chips and 1 cup of milk chocolate chips. They were perfect, and you couldn't even tell there was vanilla pudding in them. I also used one package of instant and one package of cook pudding.

Chicken Kathleen

We have really enjoyed this recipe. My husband is a picky eater, so that says a lot. I used white rice as the only yellow rice I could find had spices in it which my taste buds tend to be sensitive to certain ones. I used italian seasoned bread crumbs, and will probably cut back on them next time as the topping was fairly salty. This is a definite keeper! Haven't tried it on any kids yet.

Homesteader Cornbread

My husband is a BIG fan of cornbread. My old recipe was his grandma's, so he was skeptical of a new one. He absolutely loves these! Mine are still O.K. the second day, but they've been devoured by the time the 3rd day rolls around. Haven't had a problem with them getting hard. Everyone else loves them, too! They're not as course as most corn bread, but nice and moist! The only cornbread recipe I'll use now!!!!

Ultimate French Toast

This recipe is easy and delicious. Nothing fancy, just down-to-earth good home cooking! My husband is usually wary of trying new things, and a generally picky eater, but he loved this (and so did his picky younger brother)! This will be a well-used recipe in our home!
