This falafel recipe was yummy and easy to make! The original recipe does not include chilling the patty mixture, but I found it much easier to work with after it sat in the fridge for about half an hour. Also, I used an ice cream scoop to make the falafel round instead of flat patties. In the end there were 12 falfel balls about the size of a golf ball. Unfortunately I didn't have the ingredients for the cucumber sauce on hand, so I ate the falafel with red pepper hummus instead. I'll be trying the cucumber sauce next time though!
