T's Sweet Potato Fries

I am giving this 3 stars because the precooking in water is not necessary. Second time around, I just precooked the whole potato for a few minutes just to soften a bit to make the potato easier to slice. The secret is to keep them dry. Dry them well with a paper towel if necessary. Then cut them into 1/2 to 3/4 slices. Make sure they are square as the points burn easily if too pointy. Toss them in a ziplock bag with the olive oil then on another bag dust them slightly with cornstarch before putting then in the oven. This will make them crispy.

White Chocolate Raspberry Cheesecake

This cheesecake comes out ugly and cracks all over the placeif you follow this recipe, I should have read the reviews and bake this in a cookie sheet water bath. I would try again and post my review. Do not follow this recipe as stated, it yields dissapointing results!!!

Cream Cheese Penguins

I would give these 5 stars or even 10 for presentation but 1 minus in taste. These are absolutely adorable and every one loves looking at them but not eating them. I tried the Onion/Chives cream cheese and even added a bit of garlic salt but still very bland. A pain to make but if your goal is to bring smiles to people faces then this is for you

Manicotti Alla Romana

Instead of the bouillon I used a mix of cream of chicken and half and half to make a sauce and adjusted the salt to my liking. Added some fennel seeds to the ground beef for sausage flavor as I didn't have sausage and also added previously sauteed and pureed, green peppers, onion, garlic, oregano and a bit of tomato sauce to the beef.

Don Struble's Puerto Rican Pork Roast

This is absolutely Puerto Rican. I am not sure why doing a variation with the Worcestershire instead of the vinegar etc would make it less authentic, but this is what we know as Carne Mechada but this one is made with Pork. It should have been a boneless pork roast but you can do the same with Beef. This is a Pork Roast too not to be confused with the so called Pernil Asado. Some people put pepperonis,some ham etc. This is why there are recipes. Everyone would make them a bit different. I marinade the meat with oregano, olive oil etc, and then stuff it. Really good and flavorful.

Pineapple Rice Pudding

My family didn't care much about this one or the pineapple sauce. I personally thought it was too dry or not creamy enough, so I kept adding more milk to it. It was also not sweet enough by itself, thus the reason for the pineapple sauce I guess. The pineapple sause taste reminded me of the baby food pineapple dessert. I don't think I might be making this again.

Broccoli Rice Casserole

I am becoming dissapointed with this site or maybe I am just having bad luck with bad recipes lately. This was barely edible. We ate it, but it was nothing special or tasty. Not sure what all the fuzz was about.

Brie Pecan Rollups with Raspberry Sauce

Sorry, but I was really dissapointed with this recipe after all the good reviews. It was absolutely tasteless and everyone at home was forced to eat it basically, as it was the only thing available for dinner. My boyfriend suggested stuffing it with blue cheese instead, which sounded like a good idea.If I EVER make anything similar to this recipe again, I would use chives flavored cream cheese and finely ground sausage or bacon in the mixture to add flavor to it and bake it of course.

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

After the rave reviews, and as much as I like blue cheese, I couldn't wait to try this recipe. I was dissapointed though. I am giving it three stars cause in all fairness my boyfriend like it and we could finish it. I didn't care for the sauce. The blue cheese on the steak was good but not spectacular. I cooked the steak following the recipe and it was overcooked for our taste and we are not rare meat eaters. I would have prefer a little pinkness in the middle. If I ever try this again, I will cook it only for 10 minutes or so as almost 20 minutes (searing,oven and broiler time) is too much for filet mignon to start with anyway.

Fiery Baked Beans

Sorry, but I didn't like this recipe at all. I just finished preparing this and I am afraid they would go to waste. I was hesitant about the cinnamon and I should have go with my gut feelings and omitted it. I like cinammon just not on beans. Ugh Yikes!! As this was cooking I knew I was going to hate it. It smell gross!!. To try to masquerade the cinammon taste I added onion powder, garlic, cilantro, liquid smoke, bell pepper and some ham flavored seasoning I had. Still the cinammon taste lingered a bit and it just taste terrible!!! Sorry :(. It sounded really good. Maybe next time, if I ever make this again, I will omit the cinammon

Calamari

Something is missing from this recipe and have to give it a bad review cause it would have been a waste of calamari. Flavor was good but after reading the complains here, I saw this on another recipe and decided to follow the advice. Try soaking the calamari anywhere from 30 minutes to two hours in Buttermilk if you have time (optional). Then drain the calamari and save the buttermilk. Coat the calamari with flour, pass thru the buttermilk and then flour again, then fry it. The batter will stay and it won't be wasted calamari.

Pumpkin Layer Cheesecake

Very nice presentation. I ended up with a very pretty, three colored layers pie as I used a chocolate graham pie crust instead of the regular. My daughter requested it :) as she loves chocolate. The cheesecake was a little to rich for me, but everyone liked it. If you like very rich cheesecake and pumpkin pie, then this is definitly a cheesecake heaven and a keeper for cheesecake/pumpkin pie lovers ***Edited to say I am making more of these to give away as presents on thanksgiving day to my neighbors. I disagree with the reviewer who stated this is plain looking. How about some whip cream on top for god' sake!! Looks don't make a recipe. What is more plain looking than a plain pumpkin pie??? Nothing. This one is pretty and have layers of colors!!!!

Out of this World Turkey Brine

Wow, I was really reluctant to try this recipe and ruin the turkey as I like my turkey well seasoned and marinated. We had an early Thanksgiving dinner this weekend since we were not all going to be together in Thanksgiving day in a few days so I decided to make a stress free, easy early Thanksgiving day so I gave this recipe a try. I am glad I did. I was suprised how good the turkey came out. I didn't have to baste. I just glazed it during the last hour with a pomegranate glaze, I usually put in all my turkeys and I ended up with the tastiest, perfectly browned, moist turkey I ever hoped for. The only changes I made was to use Kosher salt, added sprigs of fresh rosemary and a bit of garlic and Onion powder to the water. Thanks for sharing!

Grandma's Green Bean Casserole

Well, we had an early Thanksgiving day this weekend and I have to give this one a 5 stars. Even the kids liked it. It was all gone by the end of the meal!!! My son even said it was the best part!! What!!!??? I cried, but he made up by clarifying "of the sides that is" I brined the turkey with a brine recipe from this site and that was the best part :), but this side really made the spotlight. I don't like green beans casserole at all and neiher the kids, however, for some reason I always end up making it, just as part of the Thanskgiving a tradition and it always goes to waste!!!!! Not this time. I added a few small dollops of light cream of chicken soup and used Fat free sour cream, I used fresh green beans and added an extra can of french style canned beans. Delish and now I can have a light dish for poultry, fish etc. Thanks for the recipe! Update: Just to say I am printing this again. It is now a tradition on our Christmas/Thanksgiving dinners and Kids request it ALL the time as odd as that sounds!!!! Then say YUM!!!

Thin Mint Crackers

Amazing!... Soooo easy. Just coming back from the kitchen where these cookies got devoured in just a few minutes and I got accused of stealing from the girl scouts :)... the recipe that is. I had to save three cookies for myself in a baggie when I saw how fast these were going. I melted half of milk chocolate and half of semisweet chocolate and then added mint flavor to my liking as I didn't want to make 80 cookies. I think for me I would prefer to use just the semi-sweet chocolate tough as I prefer dark chocolate. The kids like milk chocolate so I mixed them both. I used a fork like other reviewers suggested to dip the cookies in. These came out pretty, just like the ones in the picture. I think the ones my daughter did came out with the cute swirls as above as she just didn't think too much about it (lol). The key is too make sure the chocolate is absolutely melted and silky before dipping the crackers. Of course, since my 5 year old daughter wanted to help, I transfered the melted chocolate to a big glass cereal bowl and put the bowl in a slighter bigger bowl filled halfway or so with some of the hot water from the double boiler. This way the chocolate had a bath and kept in a liquid state. I am planning to make this for Christmas to give away. Thanks for sharing!!

Banana Banana Bread

This was good but I thought it needed more sweetness. I think the recipe should call for 3/4 brown sugar PACKED (press down the sugar in the measuring cup and then add more to measure 3/4 cup. Due to the other reviews here, I checked other recipes and combined it with this one. I added sour cream, vanilla a cinammon and a tiny bit of nutmeg. The aroma and the flavor was really good but it was definitely lacking sugar. I save the day by whipping margarine with brown sugar and honey then spread it over the warm slice of bread.

Easy Arroz con Gandules

There is too much water on this recipe. For 3 cups of rice. I would use 4.5 cups of water. To make the crispy rice or "pegao" do the following, at the point were you stir to mix the rice and water etc, cook on medium without covering and without stirring until almost all the water is absorbed, then "turn" the rice so the rice on the bottom is on top and the top is on the bottom, be careful not to scrape the bottom layer of rice. Cover with a tight fitting lid on low for about 20-30 minutes or until tender. Also you need to use a "caldero", if you use a non-stick pan, you won't get it

Chicken with Raspberry Sauce

Hmmm, I was excited to try this recipe but there is something on the recipe that shouldn't be there. It is either the soy sauce or the vinegar, I didn't like the sour/salty flavor on the sauce. I can't pinpoint it. I think I prefer a straight sweet raspberry sauce

Restaurant-Style Buffalo Chicken Wings

Sorry but too buttery and messy. Didn't like the breading on it as it turned into a oil/flour blob.I think I will stick to the way I make them which is using a whole bottle of cayenne pepper sauce (or more if not using water). I add half of that bottle in water mixed with 2 TBLS of flour or cornstarch and it add it to the sauce. Add a little garlic powder, black pepper and only one Tablespoon of butter. Heat the mixture until thickened. Pour over baked or plain fried wings and put them in the oven until the sauce dries a little over them.
