Baked Salmon II

Fabulous! Works with salmon steaks. I crushed the garlic and used fresh basil. Also, I just took the dish in which the salmon was marinating and cooked the fish right in it - no need to separately wrap the fish. Very refreshing!!

Classic Minestrone

Truly sensational!! I substituted drained, whole tomatoes, cut up. Delicious, wholesome, nourishing and filling. You don't have to be a vegetarian to appreciate this minestrone.

Chicken Enchiladas I

Teen tested!! An absolute winner! We used leftover chicken thigh meat from a "failed recipe" and simply shredded it into the mixture. Served with Goya Spanish Rice and Southwestern Style Refried Beans. It was a nice reprieve from the usual ho-hum meals.

Creamy Broccoli Casserole

Wow! Truly a surprise. Smooth, creamy and delicate in flavor, this is a special broccoli casserole. I served it with Bisquick chicken and some buttered noodles. Enjoy.

Seven Layer Dip II

Excellent! We made this for New Year's Eve and enjoyed every bite. I used fresh, crushed garlic in the guacamole (instead of the garlic salt) and omitted the taco seasoning (mixed into the sour cream). It was fun dipping through the layers. (The teen actually sneeked some more during the night ... a guarantee that this is kid friendly!)

Best Easy Chicken Croquettes

I have always loved chicken croquettes but found them cumbersome to prepare. This recipe was quite easy and very quick. Instead of chicken, I substituted the leftover turkey from Thanksgiving. These were just delicious. The proof, however, came from the teen who returned for 2nds and 3rds. She is a very picky eater, so that was quite a compliment.

Vegetable Beef Soup I

This is a wonderful soup and we made it with leftover grilled steak. I used V-8 juice and fresh vegetables. One last substitution was thyme leaves instead of the oregano. The "teen" ate 2 huge bowls and finished off the leftovers, as a snack, the next day.

Basil Shrimp

Cranberry BBQ Chicken

I am not a big fan of anything that calls for jarred sauces but this recipe was a big hit, especially with my 14 year old. She rarely comments but tonight she went all out to make me understand that this was a good dinner. The combination of flavors and textures made for a truly interesting change of pace. I poured off the excess fat after frying the chicken and found that it was done after 60 mins. We served it with rice and a salad.
