Thank you Maureen for a wonderful recipe and to Mom Saved By Grace for taking the time to compile all the good tips from other reviewers. Really helped. Delicious on onion buns.

Pumpkin Coconut Bread

Reviewed: May 19, 2006
Made this twice, second time a double batch. Nothing but GOOD to say about this recipe. I leave out the clove and add a little extra of the other spices. Took out enough batter before adding the coconut to make one loaf and it was great, too. I don't even LIKE pumpkin, but I like this.

Just tasted my meatloaf---delicious. No kids and didn't have a lot of reason to cook. Now I do, and I want to thank all of you for your reviews and tips. So helpful and fun to read!

Spicy Black Bean Potato Salad

Reviewed: Nov. 10, 2005
So good! A lot was gone while it was still warm. Used half mayo, half Miracle Whip, canned jalapenos, and all the bacon went in the salad.

McCormick's Classic Pumpkin Pie

Reviewed: Nov. 23, 2005
Made this for my nephew's kindergarten "Thanksgiving Feast",(a VERY big event!) Liked the idea of a little less spice for little ones, but still a traditional pumpkin pie. Made a full, pretty pie. Good!

Honey Ginger Carrots

Reviewed: Jan. 7, 2006
Was afraid these would be heavy-sweet, but they had a delicate sweetness that brought out the flavor of the carrots. Used frozen carrots with 1 T. less butter and a couple swipes of fresh ginger. Added a little salt at serving time which gave them a nice sweet-salty taste that I like. A good blend of flavors, happy with this recipe.

Pancakes I

Reviewed: Apr. 18, 2006
Read "The Subtle Art of Perfect Pancakes" on this site. This article has several tips, one of which is to refrigerate the batter for a while to allow the gluten to settle down and let the baking powder start to act, resulting in fluffy pancakes. Also , do not stir before using as this pops all the little bubbles created from the sitting. Interesting, huh!?! Anyway, except for a little vanilla, made recipe as it reads and I was happy with them.

Apple Pie by Grandma Ople

Reviewed: Nov. 11, 2012
I have had Grandma Ople's apple pie in my recipe box for quite a while, but had never tried it. I wanted to take it to a Thanksgiving carry-in at work and decided to make one for a trial run. I read a lot of reviews, but with the exception of mixing some of the sauce with the apples first, and using the apples I had on hand, (Gala and Jonathan), I made it exactly as written. If Grandma Ople didn't feel the need for extra spices, doggone it--neither do I!!! It was really superb, carry-in worthy--no doubt. I am a pie baker and own several pie pans--none of which were at my house. They were borrowed or left at someone's house with pie in them, and I found myself at home at 2:00 in the morning with nothing to bake this pie in but a flimsy aluminum pan that I had saved from a store-bought pie. It turned out great! Can't wait to try this in a proper pan. I do think that I will bake on 350 for the whole time as I would normally do. Mt pie had a few little burnt spots using the 425/350 method. Also, if you are new to pie-baking, it is a good idea to place some strips of aluminum foil loosely around the edges of the crust for 10-15 minutes of baking time to prevent burning. Wonderful recipe--thanks for sharing!

Chimichurri Sauce

Reviewed: May 19, 2006
I tried this recipe and found it a very good match for my tastebuds. Although I liked it very much, not ALL of the family did. That is just a difference in people, NOT because it is a bad recipe.

Chocolate Black Tea Cake

Reviewed: Oct. 11, 2008
I am a pretty good baker, was intrigued by this recipe and the good reviews. And-----there is always the possibility that I messed up--!! I was careful to take it out on time, mine was not dry, just dull. It was fun, though, making something unusual always is.
