I am a pretty good baker, was intrigued by this recipe and the good reviews. And-----there is always the possibility that I messed up--!! I was careful to take it out on time, mine was not dry, just dull. It was fun, though, making something unusual always is.

Chimichurri Sauce

I tried this recipe and found it a very good match for my tastebuds. Although I liked it very much, not ALL of the family did. That is just a difference in people, NOT because it is a bad recipe.

Pumpkin Coconut Bread

Made this twice, second time a double batch. Nothing but GOOD to say about this recipe. I leave out the clove and add a little extra of the other spices. Took out enough batter before adding the coconut to make one loaf and it was great, too. I don't even LIKE pumpkin, but I like this.

Pancakes I

Read "The Subtle Art of Perfect Pancakes" on this site. This article has several tips, one of which is to refrigerate the batter for a while to allow the gluten to settle down and let the baking powder start to act, resulting in fluffy pancakes. Also , do not stir before using as this pops all the little bubbles created from the sitting. Interesting, huh!?! Anyway, except for a little vanilla, made recipe as it reads and I was happy with them.

Honey Ginger Carrots

Was afraid these would be heavy-sweet, but they had a delicate sweetness that brought out the flavor of the carrots. Used frozen carrots with 1 T. less butter and a couple swipes of fresh ginger. Added a little salt at serving time which gave them a nice sweet-salty taste that I like. A good blend of flavors, happy with this recipe.

McCormick's Classic Pumpkin Pie

Made this for my nephew's kindergarten "Thanksgiving Feast",(a VERY big event!) Liked the idea of a little less spice for little ones, but still a traditional pumpkin pie. Made a full, pretty pie. Good!

Spicy Black Bean Potato Salad

So good! A lot was gone while it was still warm. Used half mayo, half Miracle Whip, canned jalapenos, and all the bacon went in the salad.

Rempel Family Meatloaf
