Pan-Seared Tilapia

This was delicious. I cooked it 3 minutes on each side, and it was perfect. I added, as some others had, garlic powder, old bay, oregano, and 21 Seasoning Salue from Trader Joe's. No salt. Made some tartar sauce and sqeezed on some lemon. Delish!

Sweet and Sour Chicken II

This was delicious. However, I really made a lot of changes. First of all, I used drumsticks and I browned them in some oil first. I removed the chicken and added it to another pan containing the sauce mixture. I carmelized the vegetables in the first pan. (I used red, yellow and green bell peppers and onions). I let both cook for about 15 minutes, then put them together in the same pan, added the pineapple and cooked for about another 5 minutes. I too had used some extra pineapple juice. It turned out great... more like an Hawaiian dish than Chinese!

Asian Beef with Snow Peas

This was absolutely delicious. It really tasted like it came from a Chinese restaurant. I did, however, tweak it quite a bit, as follows: First of all, instead of just snow peas, I added red bell pepper and broccoli florets -- which I cooked first. When they were done to my desired tenderness, I pushed them to the back of the pan and added the beef. ALSO, to the liquid mixture, I added about a TBS of toasted sesame oil (a must for flavor!). And then, towards the end, I added a few red pepper flakes, and served over brown rice. I agree with others: make at least triple the sauce. Can't wait to eat this again!

Easy Coq Au Vin

I'm giving this 5 stars because it was so easy to make and very tasty. But I think it was so good because of the changes I made, as follows: Added more liquid than called for so that at the end, instead of using corn starch or flour, I reduced the liquid down. And I doubled the onions. Also, I used some of Trader Joe's 21 Seasoning Salute and Heinz 57 sauce (which added a lot of zip and nice color). All in all, a very good dish and a keeper.

Best Ever Sausage with Peppers, Onions, and Beer!

This was fantastic... I was licking my plate!! I did make a few changes, as follows: As per another reviewer, I added chicken along with the sausage. Instead of beer I used home made pasta sauce. Used dried basil and oregano. It was a little bit like a cacciatore -- absolutely delicious. Oh yes, sprinkled some Romano cheese on top.

Fantastic! I doubled the herbs and added quite a bit more stock (because the fishy broth is my favorite part!). First time I've ever made Ciopinno, and it was a lot easier than I had anticipated. Enjoyed it with some crusty bread from Trader Joe's

Poached Eggs and Asparagus

Delicious. I used sesame crackers instead of bread (watching my carbs), and a combination of chedder and shredded parmesan. Also, I cooked the eggs a little bit longer so that the egg yolk turned hard, and I could thus easily eat just the egg whites. Didn't have boullion, so I seasoned the water with salt, pepper and garlic powder.

Veal Cutlet with Red Peppers

A great recipe for veal cutlets. Different from anything I've had before. I pounded the veal a little to tenderize it, and to those who found it gummy, make sure you shake off all the excess flour. I always season to taste, so that way it's not too bland and not over seasoned. I Served with Asparagus and parslied potatoes.

Pasta with Chicken Mushroom Cream Sauce

This was delicious, and I didn't even use cream -- to save some calories and lower my fat intake, I used whole milk and chicken stock instead. I added a little nutmeg and some hot pepper flakes. Can't wait to make it again.

Warm Chicken and Mango Salad

This was a very good salad. I had plain yoguart, so I just added a little vanilla to it, and put some honey in it. I Went heavy on the spices, which made it really tasty. I like the idea another reviwer had of serving it on brown rice. Also, I think I may try chilling all of the ingredients next time.

Chicken Tikka Masala

Absolutely delicious! I adjusted seasonings and spices to taste, and I used low-fat milk. I used chicken thighs and baked them in the oven, as other reviewers had done. I cannnot imagine it turning out any better. LOVED IT! Round 2: Second time I made this, I added steamed carrots and cauliflower made in bamboo steamer. This really perfected the recipe. Also, a swirl of honey at the end added the sweetness it deserves. HAIKU: Tikka Masala with Cinnamon and carrots, makes this dish sublime.
