Lemon Poppy Seed Dessert Cake

SUPER-moist cake, topping OK - everybody LOVED IT!!! I will definitely be making this again, but perhaps without the whipped topping/lemon mousse on top. Could I use real whipped cream instead? Maybe that would taste better than the CoolWhip (regular) that I used.

Rhubarb Cheesecake

This was very yummy! I used 1 cup crushed graham crackers and 1/4 cup chopped pecans with the sugar for the crust - everything else I did as per the recipe. A great use for rhubarb!!

Delicious Peanut Butter Cookies

Yum! I made these according to the recipe and they were fantastic! I let the batter sit on the counter for a few hours and had to re-mix it with a little bit of extra milk to get it dough-like again, though. That would not be needed if you bake them right away, I'm sure. I doubled the recipe and it made 10 dozen. We like them kind of small, so we measured .5 ounce balls and rolled them in a bit of sugar before pressing with fork for that traditional pb cookie look.

Very Easy Mushroom Barley Soup

This is "souper"-delicious! I used 2 TBSP. of garlic and 16 oz. sliced baby bella mushrooms. I doubled the rest of the recipe. I did not add salt as the broth/stock is salty enough. I used pearl barley and did not have to soak it ahead of time - we like our barley to be "al dente" so 50 min. was plenty. Also - as another reviewer suggested - I toasted the barley at 350F first although I had it in the oven for about 8 min. - at 5 min. it hadn't gotten to the point where it had that toasted aroma and look yet.

Shrimp Scampi Bake

Love it! It's SO easy and would be a nice meal to make for company - you wouldn't be slaving away while everyone else socializes - you can prepare the shrimp ahead and throw it together right before serving. My family loves it!

Elderberry Pie II

This was my first elderberry pie - we picked the berries from bushes we had planted in our backyard a few years ago. I love that this recipe has you thicken the filling before putting it in the crust because I don't like runny fruit pies. This method lets you control the thickness better. I used a full top instead of a lattice, and my son agrees that the pie tastes better on Day #2. Elderberry certainly has a unique flavor - it wasn't quite as "crunchy" (from the seeds, I imagine, because we picked these over twice to remove as many stems as possible before washing) on Day #2. I'm going to try some jam and syrup, too. We picked about 15 lbs. of berries and the bushes look like we barely touched them! Note to anyone from Western NY or Southern Ontario: we bought the bushes as bare root plants from the Erie County Conservation Tree and Shrub Seedling Program that the county runs every Spring. We bought 6 bare roots - about 12" tall at the time - and after two years the plants were VERY bushy and about 10' tall. They cost next to nothing - it's a great program to check out as they offer LOTS of other trees and plants, too. These elderberry bushes attract birds, butterflies, bees, etc. - this is the first year I got to the berries before the birds! There are lots of berries to share, though!!! Thanks for the great recipe!
