About this Cook
Maiden name McCartney,the red is from Great Gpa. He came to Colorado from Scotland in his kilts. Love quilting and my family. My sons bring the "red" out in me by calling a quilt a blanket. Fiance and I live in a HUD home that we are remodeling slowly into our idea of what wonderful will someday be. Ah heck, it's wonderful for us to have our own house & not sleep in our vehicle. We had both experienced that B-4 we met each other. SO NEVER SAW that one coming. Sleeping my truck at 39? We agreed we wanted a house B-4 marriage. B careful what you wish for. So we moved in w/ no bathroom, no heat,no gas, we cooked our dinners in an electric wok on the kitchen "counter" that was a door horizontal with a sink installed in it. We had 5 roomates and no shower,garden hose led from the only hot water hookup through the living room to the side walkway,we showered behind the gate. No roomates these days.Thank goodness. Now, we shower inside & talk to friends who made their old house happen. Life!!
My favorite things to cook
Yeast bread. My Mom told me often that bread is one of the best things in life. I tried to make it starting at 9 years old. No idea what a "stiff dough" meant or how to treat yeast. Steadfast, my Mom would eat that just baked slice of a brick and tell me it was good. Then my Dad got into the mix. Thank goodness for his analytical skills. Shortly after that he taught me the why's and wherehows of yeast baking. Love it. Worked at a few bakeries and still the most fun is bread at home.
My favorite family cooking traditions
One is Scotch shortbread from my Granny & Great Aunt Elsie. My Poppy tells me that the original recipe said to "start with a wee bit o stinkin butter".
My cooking triumphs
Can make a mean pot of green chili, but the prob is that I taught one of my sons and my guy how to make it. They took over! Now when I make it the two of them are in the background telling me how to do it! AAaargh!!! You guys! Do you remember who taught you this recipe? (My ex MIL taught me.)
My cooking tragedies
I HATED cooking & loved baking. Baking is more precise. Finally realized I'm a good cook (10 yrs. out}. Had to feed the kids. Then one night I went to bed, heard an explosion downstairs. The hard boiled eggs burst & decorated the kitchen ceiling. I was tired! Ooops.

Spinach Brownies
These were delicious. I sauteed the onions plus a few chopped mushrooms and then added 10 ounces of chopped spinach to wilt down, all in 2 tablespoons of butter. Then went with recipe and added the rest of butter melted to the batter. Used part grated mozzarella and a bit of swiss. Stirred it all together and sprinkled a little parmesan on top before baking. Yum!!! We were having meatball sandwiches and these went so well with a bit of spaghetti sauce.

Tasty Lentil Tacos
This was so good! I saved and printed the recipe for my Dad with ideas of trying it myself. Left the recipe laying in his recipe zone, (kitchen desk--big surprise) He instructed me to buy the ingredients because he wanted to try it. Totally chompy! We did a couple of things different. Used one reduced sodium can of chicken broth and added water for the rest of moisture requirement. Couldn't find salsa at the discount store so grabbed a 10 oz. can of Rotel tomatoes with green chiles. As per prior review, we cooked the lentils 40 minutes. (Also higher altitude requires longer cook time for legumes. Can't wait to make this for my meat eating guy. This recipe is so healthy and so yummy. Wait, forgot to compare the price of hamburger lately. Lentils really do give a good texture and flavor to this dish.

Walnut Brownies
Pretty darn good. Nice chocolate flavor (my guy commented on that after 2 bites). It's a great recipe because you probably have all of the ingredients in the cupboard. Now that I've said that, had to sub margarine for the shortening because no shortening in cupboard! I added 1/2 of a banana (mashed) as many people mentioned the recipe came out dry. We did not think it was dry. It did come out cakelike. Still, they were all gone by the next day and I did double it. This recipe is a keeper. Nice to be able to make brownies without special expensive ingredients. (Such as chocolate chips or fudge syrup.) This one stays in the recipe box and we will surely make it again.
