Salsa Chicken Rice Casserole

Boo yeah! This casserole kicked arse! I substituted brown rice and used chicken thighs and made my mom's secret homemade salsa for it and it came out peeeerfect! I made it a night ahead for the puppysitter who was in the house the next day. I walk in and immediately she says: "Sorry, but I ate lots of that casserole you left...it was too good, I couldnt' stop eating!" No biggie! I should also mention that since I live alone, I usually halve recipes and this one halved beautifully!

Chicken and Green Bean Casserole

Overall this is a super easy and tasty recipe. Here are modifications: -I added silverbeet (swiss chard) -I cut the chicken into smaller strips -I used lowfat mayo -Added a few dashes of hot sauce to the soup/mayo mixture -I added panko breadcrumbs to the parmesan cheese - I served it on top of a cauliflower mash I made up. This recipe surely makes enough for 8 people. We had 3 sets of leftovers for our lunches.

Bill's Blue Cheese Dressing

This is THE BLue Cheese Dressing recipe from which to work from. I simply say work from, as it, gives you the basis to make a more waterier version etc. I haven't had blue cheese dressing since moving out of America and this brought back all the best memories of ordering an iceberg salad in a diner with my parents. Yum-o!

Kofta Kebabs

Delish koftas! Only thing I did was reduce the salt by half as I only had table salt and also reduce the amount of cinnamon per the other reviews. I bakes it in a 350F/180C oven on a rack for 20 mins and was easier.

Delicious Peanut Butter Cookies

heed reviewers warnings and use a full cup of PB and DO NOT leave in over longer than 10 min!! You'll get a nice chewy, sweet, salty treat. This made loads of cookies for me and they lasted all of 4 days! A lot considering I live alone and had only one person over in that time.

Baked Bar-be-Que Chicken

I have a convection oven and thought I only had to bake it 45 mins at 170C but ended up being a bit longer than an hour. Then followed the recipe as usual and had a GREAT BBQ baked chicken. Will def do again!

Chicken Breasts Pierre

Awesome! I made this with chicken drumsticks as was more budget friendly than breasts. Then I halved the amount of chicken but made the same amount of sauce and with the skin on the drumsticks melding into the sauce made for nice sticky sauce atop white rice. This sauce would be great for pork ribs.
