Chicken and Broccoli Braid

This recipe was delicious! I didn't use the red pepper or dill weed, instead I added mushrooms and used a veggie seasoning and sprinkled extra almonds on top. One of our new favorites! I will definitely use this when entertaining too, it's beautiful. It's all the best foods wrapped up in a crispy croissant.

Delicious Ham and Potato Soup

This recipe is a keeper! Very flavorful, though it could use a little less salt. Used petite red potatoes and left the skins on and topped with sharp cheddar cheese. A great soup and easy to tweak any way you like. I prepared it early and let it sit in a crock pot to really let the ham flavor stew.

Libby's® Pumpkin Roll with Cream Cheese Filling

This recipe is PERFECT! The only thing I do to improve upon it is to refrigerate the filling while you wait for the cake to cool (exactly 1 hour is perfect). This keeps the filling from being squished out the sides and gets you the perfect swirl. It sounds like a complicated recipe, but follow it exactly and you get an impressive treat that everyone loves. I suggest the walnuts, too. Its's delicious!

Quick and Easy Pancit

Excellent dish and easy to tweak! Very easy and healthy. I added sliced portabello mushrooms and it was great served with white rice. I will definitely make this again, it makes enough to serve an army and reheats well for yummy leftovers days afterwards.

Caramel Apple Cupcakes

My friends loved these cute cupcakes! I short-cutted the cupcakes by using apple-cinnamon muffin muix from a box. Also, for an even better look, I peeled the cupcake papers off, dipped the bottoms of the cupcakes in caramel and sat them upside down so the caramel dripped down them. I used store bought lollipop sticks and they looked just like real caramel apples. I will definitely post a picture!

Stuffed Chicken Breasts with Cornbread Dressing

This is a must-make! I was making dinner for a bunch of my husbands coworkers, so I made a thanksgiving feast, with this as the main dish. Sooo good, a yummy southern twist on chicken. Super moist and sweet. Great with green bean casserole.

Pumpkin Roll Cake

Excellent! The only advice I'd add is to refrigerate the filling prior to spreading. It keeps it thick and makes the roll look great. The first time I didn't do this and the icing thinned out when I rolled the cake up and it all squeezed out the end. Looks complicated (the first time may not come out perfect) but otherwise a simple dessert.

Honey Cornbread

These were delicious! I usually make cornbread from the box but this tops all. Such a sweet flavor really pairs well with chili and it was easy to make. I added most of a can of sweet corn so there was actual corn pieces in it.

Gorgonzola Stuffed Chicken Breasts Wrapped in Bacon

Great recipe, especially for those who love meat and cheese (uh...everyone). I followed the recipe exactly and at the end brushed them all with a nice coating of Sweet Baby Ray's brown sugar BBQ sauce. YUM!

Rugelach

Never heard of Rugelach before, but these are delicious. I don't have a food processor but chopped up the ingredients needing chopping with a small slap-chop style chopper and then the dough easily mixed together with a spoon and additionally by hand. I found a 9 in. plate to trace out my circles after rolling the dough out and they all came out perfectly sized and even. I did notice that my second batch, which was chilled longer, was an easier dough to work with and flour helped. A crisp, flaky treat that is very versatile!

Enchiladas

These are amazing!The main reason is the sauce---I wasn't bold enough to use the yogurt (I substituted fat free sour cream) but go for the mozzerella, it will surprise you! It made the best, white cheese sauce, very creamy and wonderful. Like something from a restaurant.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

This was a huge hit! They were perfect for my Cookie Monster cupcakes (pics 211 & 212). The cookie dough seemed a little dry when I made it, but the end result was perfect! Definitely freeze them as instructed, and baking for 16 minutes was the PERFECT bake time. They will look under done but they are not. Follow the recipe exactly and you'll get rave reviews from both adults and kids! And kids were amazed-- "Cookie monster ate the cookie, it's in his belly!"

Thin Mint Cookies

I was a little worried after reading all the reviews that these would be too minty, not minty enough, chewy or crumbly...but I followed the recipe almost exactly and they came out perfect! I sliced mine to 1/4" and they were delicious, not as crunchy as the girls scout cookies but that didn't take away from them at all. I left them in for the maximum time listed in order to try and get them crisp. I refrigerated overnight so I didn't bother freezing before baking. For the chocolate coating, I bought the Wilton melting candies from a craft store in dark cocoa mint and they tasted exactly like thin mints. They were a hit at the cookie exchange and so delicious!
