Tofu Parmigiana

My husband made this the other night. (So, man friendly - lol.) I came home from work and the house smelled divinely of garlic! (I'm sure he used more than the recipe dictated.) It was SO delicious. Didn't miss meat or noodles one bit. A HUGE keeper!

Sante Fe Egg Salad

Super simple and tasty! When you're burned out on oatmeal or cereal, it's a refreshing change. Great for a snack or a side too! I sometimes add a little extra protein to it w/ leftover chicken or steak or even a piece of chopped lunchmeat.

Slow-Cooker Barbecue Ribs

Super simple & virtually fool proof. Follow rib cooking instrux & doctored up my own sauce. This will be a staple. Added large diced sweet potatoes to the bottom of the crock and served mashed as a side! Fabulous!

A Simply Perfect Roast Turkey

I was strictly looking for time & temp instrux, & as usual, slow&low is the way 2 go! Mine took slightly longer than 4 hrs & I jacked up to 400 toward the end for crispy skin, but still VERY juicy. I used Tony Chachere's cajun seasoning in lieu of S&P. Also, I prefer my dressing baked outside of the bird & stuffed the cavity with an onion, celery stalk & carrot.

Mushroom and Swiss Chicken

Delish & super simple! Didn't have green onions, so sliced a few rings of yellow. Mixed marinade right in the dish & massaged it into the chicken. Made a few slits in the breast as well. A definite keeper.

Yogurt Spinach Dip

Yummy! Didn't have dry mustard so used 1/4 tsp spicy brown mustard, also used lo-fat mayo. Put it in my bullet so it was a dressing. Hand stir for thicker dip.

Quick Quiche

Super simple & delish, BUT I recalc'ed for 4 & it only called for 3 eggs! I used 5 and lined bottom of dish w/ cooked potatoes crudely smashed. Super yum! A keeper!

Barbecued Shrimp

What a forgiving recipe! Didn't measure much or use oven & still came out tasty! I let the shrimp cook on the stovetop in the sauce - why bother w/ oven and another dish? Also, served w/ corn and potatoes (baked in microwave, but don't forget to make slits) - felt like a seafood boil!

Apple Bars

Flavor is fantastic, but bars didn't come out so solid, hence less stars. Maybe I should've cooked longer? But wouldn't that have sacraficed moistness? I took some suggestions and decreased sugar by 1/2 the amount & substituted brown sugar for the rest. Also, I added raisins and oats.

Italian Sausage Soup

O.M.Y.! (Oh my YUM!) Tips: I got a good crispy brown on the crumbled sausage. It was very lean, so I shook a little bread crumb & grated parm into the pan to absorb the rest of the fat and dimension to the soup. I also added some garbanzos as well and topped off the soup w/ shaved parmesan. In the future, I may cut the italian sausage w/ ground beef for a milder punch.

Fast and Easy Tofu Lo-Mein

Me & the hubby LOVED this! I used fresh veggies, not frozen - 2 carrots, 2 celery stalks, half a green pepper and onion, a handful of broccoli spears, & some mushrooms. I had bought cubed tofu and put it in a colander to drain for a good hour before hand and then sauteed it w/ red pepper flake and a couple splashes of soy. Also, I used a combo of beef & spicy chili ramen pkgs. SO good!

Beer Cheese Soup III

Not has thick as other cheese soups I've had, but could easily cut back on the water by a cup. (Overnight, it should thicken some too.) Wound up adding Fontinella cheese for a little sharpness. My grocer didn't have the brick Velveeta, so I used those packaged slices. I think some flavor might've been sacraficed there. The cream soup is a nice cheat!

Black Bean and Chickpea Hummus

First, I read other reviews for tips and alterations and then added my own ... I also substituted the curry for cumin - I love cumin and used 3 heaping tsps (double the recipe). I didn't have lemon juice, however I had lime juice concentrate and used 3 tbsps of that and just a splash of water. I too pumped up the amount of garlic (2 cloves) and the end result was absolutely delicious! This dip is very creamy and I wonder if I couldn't play w/ the ratio of garbanzo to black beans so that it's truer to a heartier hummus consistency. I feel like I'd like to add fresh cilantro to the mix as well! This is a great, easy, healthful recipe that's foolproof and can be customized to taste! So glad I found it!
