These were fantastic. My mom makes these as written (and they are delicious) but we try to eat as clean as possible in our house. I made these with white whole wheat flour, minimal salt (really don't need much), applesauce instead of oil, sugar-in-the-raw instead of white sugar (will be trying honey as a replacement soon) and added ground flaxseed. My 13 month old devoured them with applesauce topping. I make a double batch and keep the batter in the frig. for a couple days. I have also froze them but they are much better fresh! If you do freeze, I recommend placing wax paper or parchment paper between them - or they are a bear to get apart.
