AMAZING! I made a couple of changes though...1st i didnt have any frozen spinach, but had fresh spinch, I sauteed that with 2 small cloves of garlic, a little onion and fresh mushrooms in some olive oil and lemon juice. Then, instead of completely mayo, I mixed the Feta/spinach sautee with 1 1/2 oz of plain cream cheese with 1/4 up of mayo. (as someone suggested, we're not too big on mayo here, surprisingly I had some) Then, I wrapped that mixture inside of some slices of Proscuitto, and put that inside of some organic chicken breasts. As someone suggested I mixed lemon juice, olive oil, crushed garlic, and oregeno and drizzled it on the chicken breasts. Then I completely wrapped the chickens in bacon (3-4 peices per chicken breast, we love bacon.) Then, I used the remainder of the Spinach/feta mix and stuffed some of the fresh mushrooms, and put those right in with the chicken. This also made a great mushroom stuffer. I baked it at 375 for about 50min, until the chicken was done. It was awesome, one of the best chicken dishes I've ever made. I would've taken a picture but it was gone too quick. I will definitely be making this again :)
