About this Cook
I am an artist of nearly every kind. I am very open minded and love to take chances.
My favorite things to cook
spicy food! anything with lots of garlic.
My favorite family cooking traditions
Irish, lots of potatoes, and my mom makes great mexican food. I grew up with my grandma's cooking, very homestyle midwestern United states. she was the best cook I have ever known, but I have also been taught to try anything at least once.

Spinach Stuffed Chicken Breasts
AMAZING! I made a couple of changes though...1st i didnt have any frozen spinach, but had fresh spinch, I sauteed that with 2 small cloves of garlic, a little onion and fresh mushrooms in some olive oil and lemon juice. Then, instead of completely mayo, I mixed the Feta/spinach sautee with 1 1/2 oz of plain cream cheese with 1/4 up of mayo. (as someone suggested, we're not too big on mayo here, surprisingly I had some) Then, I wrapped that mixture inside of some slices of Proscuitto, and put that inside of some organic chicken breasts. As someone suggested I mixed lemon juice, olive oil, crushed garlic, and oregeno and drizzled it on the chicken breasts. Then I completely wrapped the chickens in bacon (3-4 peices per chicken breast, we love bacon.) Then, I used the remainder of the Spinach/feta mix and stuffed some of the fresh mushrooms, and put those right in with the chicken. This also made a great mushroom stuffer. I baked it at 375 for about 50min, until the chicken was done. It was awesome, one of the best chicken dishes I've ever made. I would've taken a picture but it was gone too quick. I will definitely be making this again :)

Quick and Easy Spanish Rice
This recipe was great! despite the urge that i had to add beans, (because there is room for experimenting with other ingredients) I did not. I basically stuck to the recipe, with the exception of the cayenne, chili powder and splash of hot sauce that I added for extra spice. It was very quick, and really delicious, i will be making this again.

Roasted Garlic Lemon Broccoli
This was ok. But I know I cooked it too long and was lacking lemon juice, so I used some lemon pepper, hoping to get a tad of the citric flavor. My boyfriend enjoyed it though, he even asked for seconds. I would make this again, I feel I learned from the mistakes I made and can see how this would be good.
