Baked Kale Chips

So easy and SOOO delicious. If you are watching your carbs and you love potato chips, this recipe is for you. Just go light on the seasoning. Kale has such intense flavor on its own it's easy to over season them.

Wilted Spinach Salad

Pretty good. Not my absolute favorite but I would probably make it again. My suggestion is to follow the recipe exactly but just be careful not to add too much dressing to the spinach so it doesn't get overwhelmingly greasy. Also, add some tomatoes or other veggie to increase the health factor.

Low Carb Cauliflower Leek Soup

Low carb awesomeness. The best thing about this recipe is you don't have to have exact proportions. I've made it three times now and I've just used whatever proportions of cauliflower, broth, and cream I felt like using. Definitely add your own spices, a lot of them, as the recipe itself is really bland. I used extra garlic, sea salt, black pepper, garlic powder, and lots of crushed red pepper. And to top it all off: add some shredded cheddar and crumbled bacon.

Stuffed Green Peppers I

LOVE this recipe. It's really one of my favorite meals ever. I've made it twice now, both times using a meat substitute like Tempeh or Veggie Crumble, and it has turned out amazingly! It's full of flavor and a stand alone meal that's easy to put together. Also, I serve it with a dollop of sour cream on top. Highly recommend as a vegetarian option!

Jalapeno Cocktail Squares

I've made this three times, and have enjoyed it every time. I always serve it warm though, like a quiche without the crust. I'd suggest experimenting with the proportions a little- we like a lot of cheese and prefer some extra spice. It's good reheated, too.

Garlic Rosemary Mashed Potatoes

I thought this recipe was really bland. Per others' suggestions, I used 2% milk instead of evaporated, but everything else I did exactly as instructed. In fact, I even erred on the side of extra cheese, garlic, and seasonings, but these potatoes were still so-so at best.

Vegetarian Split Pea Soup

Very good recipe. This is the first time I've ever made split pea soup and will most likely use this recipe again. Like other users, I substituted two medium potatoes for the orzo and I used a slow cooker. Instead of the dried chipotle chile pepper, I used 2 tablespoons of jarred mixed hot peppers, which worked perfectly fine. I cooked mine down too much (overnight, even on "Low," is way too long to leave this in a slow cooker) so I just added some extra broth. It had a stew-like texture when it was all said and done so we served it with a dollup of sour cream, which I'd HIGHLY recommend.

Roquefort Pear Salad

Oh my! I really didn't think this salad could live up to the reviews, but it absolutely did! This is the first time I've ever made homemade dressing but it certainly won't be the last now that I have this awesomely simple recipe. My one tip: I am not familiar with/couldn't find "prepared mustard" at my regular grocery, so I went with simple ground mustard, which worked perfectly fine.

Easy Baked Tilapia

This was the first time I've ever cooked my own fish and turned out wonderfully! I used grouper filets with olive oil and a little more Old Bay than the recipe called for. I would definitely recommend this recipe for anyone just learning their way around the kitchen.

Fajitas Primavera

Im certainly no whiz in the kitchen but these fajitas were easy and full of flavor! I used a carrot, zucchini, squash, corn, and green beans mixture with black beans. I didn't have any cumin or oregano but this was a delicious dinner just the same.
