Sweet Potatoes with Sausage and Peppers

Pretty decent. I wasn't keen on the idea of salsa, so instead I added black beans as someone suggested (great idea!) and diced tomatoes (as someone else suggested (another great idea!) and sweet corn. I also roasted the sweet potatoes and uses spicy Italian sausage. Created a bit of a stew. It's good. Next time might add some shredded cheese on top. Agree with one person's comment that sweet potatoes could use some help flavor wise. The cumin wasn't quite enough.

Lo Mein Noodles

Excellent! Quick and easy. I don't like celery and carrots, so instead used broccoli and shrimp along with the sweet onion. I had to make the sauce twice as one serving wasn't enough to cover the spaghetti and I didn't even use a whole pack of spaghetti, but even so, it was delicious. Maybe a tad too salty but that's my fault. I didn't have any low-sodium soy sauce on hand. Next time I make it, I'll also use mushrooms. Oh, and I used olive oil instead of vegetable.

Oven Scrambled Eggs

Eh. Still searching for a great Scrambled Egg recipe. Maybe, this doesn't translate when you make it just for one. I divided everything by 8 to accomodate 3 eggs. Oh, well.

Easy Maple Pork Chops

Really good! My first try turned out a little tough as I realized I didn't use the thickness of pork chops the recipe called for, but even still reall good and quick. I'll definitely make it again and probably just leave in the over for 20 minutes instead of 45 as I don't often buy very thick pork chops.

Sausage Pasta

I'd really give this more like a 2.5. I round up mostly because my kitchen smelled nicely as it was simmering on the stove. I didn't have any spinach on hand, but I doubt that if I did it would have reduced better. It was VERY soupy. Goulash Supreme

Pretty good. I'd add more water from the start or maybe add a can of beef broth next time. I added water a tablespoon at a time as directed and it wasn't enough to keep the macaroni and meat from burning a bit. I caught it in time, though. Overall, the recipe is good. It's really just chili with macaroni instead of beans. Doesn't take long and very satisfying on a cold winter's night.

Chef John's Chicken and Mushrooms

I really enjoyed this recipe. Mushrooms are my favorite thing and this recipe will ensure I enjoy them a lot more often. Next time I will need to sear the skin a bit longer than 5 minutes, but overall this is a great, quick and simple recipe. I seasoned with a bit more than salt and pepper. I use Adobo and Sazon. I also paired it with mixed greens and grape tomatoes topped with Balsamic Vinegar, which mixed nice with the Mushroom sauce.

This didn't work for me at all. They were thin and dripped into each other. They tasted all right, but the presentation was off-putting. Are they meant to be thin? There was no rise at all...

Balsamic Chicken

Really liked this. Might also use it for Basa or Tilapia. Only problem was that the chicken was a bit tough. I think I overcooked it as I was waiting for the leftover marinade to thicken. It never did thicken well until after I turned off the heat. Still good, though.

Coconut Rice

This was a great recipe. I used Jasmine rice instead though and like another reviewer, I also cut the recipe into fourths as this recipe made a bit too many servings for my household. I used one can of coconut milk (13.5 oz) and a little more than 3/4 cup of rice. The Jasmine rice, I think, is the best rice to use. The rice and coconut milk complement each other in a very nice way. I paired this with baked pork chops and asparagus. Very good.

Chinese Chicken Fried Rice II

I made a few adjustments to this and liked the results. I didn't exactly get the instructions for cutting the egg, and thought it might end up a mess if I tried it as the instructions indicated, so I began by sauting the onions and then I added the chicken, which I had seasoned with ginger, garlic and soy sauce. I also added the rice. I stir fried that all together until the chicken was almost done and then I added two eggs I'd beaten. In addition I sauted broccoli in butter and garlic sauce in a separate pan and then added that to the rice and chicken. Again, I was quite pleased.

Beef Sirloin Steak with Baby Spinach

I also thought this was incredibly bland and I even seasoned the meat before browning. If I can figure out a way to liven up the broth, maybe I'll make again. Otherwise, no... Addendum, soy sauce turns out to be a good way to spice up this recipe and give it some taste.
