very good the first day. i ate 4 when they came out of the oven! i omitted the raisins, used 2 eggs instead of egg whites and the one egg (too much trouble). i didnt have apple butter so i used 1/2 cup apple sauce and 1/4 cup apple sauce in place of the veggie oil. didnt hav whole wheat flour so i used oatmeal instead, and omitted the walnuts and wheat germ. great recipe altogether but, with the carrots and such, it doesnt look too appetizing after day one. i also added a banana- be careful with adding the banana , b/c even though it tastes great it makes the muffins look undercooked even when its ready :] B/c it is a healthy recipe adn still tastes great, ill give it 4 stars instead of 3 1/2
