Grandma's Corn Pudding

Reviewed: Oct. 16, 2010
I made no alterations to this when I prepared it, and it turned out wonderful. This is a sweet corn pudding, unlike most of the ones I've tried on here that call for cornbread mix or onions and peppers. It's almost desert like, but not too sweet. Great dish when you don't feel like putting a lot of effort into dinner, but want impressive results.

Impossible Coconut Pie II

Reviewed: Jul. 2, 2012
I tried this exactly as listed the first time, and agree with previous reviewers. Too eggy. Then I followed some of the other's advice (2 whole eggs, 2 egg yolks, increase coconut to 1.5 cups, sprinkle additional coconut on top) and it came out perfect! Give it time to cool a little then wrap it in foil and stick it in the fridge. I don't know why they call these "Impossible", but we call it Revenge Coconut Pie, because it's a dish best served cold. Make those changes, and you have a 5 star, super easy pie.

Chicken Salad

Reviewed: May 27, 2012
Funny, all the high star reviews added a ton of stuff to this. By itself, it's blah. No flavor, just chicken and mayo with a little crunch. However, it's the base for pretty much any chicken salad so do this and then add what you like. I added bacon, chunks of cheddar cheese, and a little bit of diced dill pickle.

Pumpkin Casserole

Reviewed: Aug. 27, 2010
I had some sugar pumpkins that didn't cure right so I needed to cook them asap. This was easy, didn't require too many ingredients, and turned out great! Great base receipe to alter to suit your needs! CHANGES: I had a butternut squash that needed to be used, so I made this with one small pumpkin and one butternut squash. Also used brown sugar instead of white, and added nutmeg and a dash of ground cloves.

Snow Grapes

Reviewed: Jul. 26, 2012
We have our own vineyard and have more grapes than I know what to do with this time of year. Sometimes they can be a little underripe when I pick them and on the sour side. This recipe had just the right amount of sweet to offset the sour. Perfect the way it is. Next time I'm going to add chopped pecans.

Butternut Squash Soup

Reviewed: Oct. 16, 2010
I made no alterations to this recipe when I prepared it, and it turned out great! Expect to spend a lot of time peeling the butternut squash... next time I make it I may go ahead and roast or steam it first to help soften it. Very easy to make, not many ingredients required, and it turns out fantastic. Good recipe all around! Make extra and freeze or can it for later!

Tasty White Bread

Reviewed: Jun. 4, 2012
Is it just me?? I've made this twice now, going exactly as the instructions say, and I've made solid white bricks. Didn't rise, didn't brown. The problem is the flour... 6 cups is way too much. The dough is so stiff that it can't rise, and tears appear as you knead. I knew better than to keep adding flour, but it called for 6 cups so I forced in 6 cups. It isn't my yeast because I have several gorgeous beer breads on the counter as I type. It's this mix. I'm going to try it one more time, but cut the flour down to about 4 cups, and see what happens.

Microwave Oven Peanut Brittle

Reviewed: Dec. 17, 2011
LOVE THIS! I have followed it exactly to the directions and had good luck with it. However, I decided to decrease the amount of baking soda to a half teaspoon and I like the results better. The best time for me has been 6 minutes and then 2 minutes on high. If you decide to cut back on the amount of nuts to save money, know that you'll need to decrease your cooking time. I scorched a batch that I only used a 3/4 cup of macadamias in it. :(

Broiled Ginger Chicken

Reviewed: Aug. 26, 2010
It's easy and fast, but not much flavor. HOWEVER, we remade it with about a 1/4 cup of Sriracha sauce mixed in with the mayo instead of the cayenne, and then doubled the ginger, and it was better.
