Zucchini Risotto

Reviewed: Oct. 12, 2013
Delicious. I substituted the first cup of liquid with white wine (I think this is such a critical flavor/acid for risotto). I followed other tips to double the zucchini, which I also rough chopped and lightly sauteed before starting the rice. I'm not a huge sundried tomato fan, so I actually halved that amount, but the smokiness was really nice in the dish. I also fried two chopped slices of bacon, set aside until adding at the end, but cooked the onion in some of the reserved grease in addition to the butter. Overall a big hit that will definitely get made again, but I think next time I will skip the bacon and up the amount of cheese for a different spin on it.

Lime Cilantro Rice

Reviewed: Mar. 30, 2011
Good flavor, and very pretty. I did not find the amount of cilantro to be too much like some other reviewers, but I will be cutting back on the lime next time. (I should have started with a Tbs and tasted.) This went spectacularly well with some grilled chimichurri shrimp.

Mediterranean Linguine with Basil and Tomatoes

Reviewed: Mar. 1, 2011
I substitute a large can of diced tomatoes because I like the extra sauciness created by the juices. 2-3 Tbs of oil is plenty for me. I mince 1 clove of garlic and thinly slice 1-2 more and fry them for about a minute before adding the tomatoes.

Garlic Cheddar Chicken

Reviewed: Jan. 22, 2011
This chicken was super juicy, and the leftovers were delicious the next day, too. I used Italian seasoned breadcrumbs, and dotted the chicken with some extra butter in the baking dish, but it needed very little.
