Perfect Turkey

I only brined the three hours due to lack of time (if you don't have a large enough stock pot, a cooler will work). This guide is fantastic!!! Before I put it in the oven I melted a stick of butter and poured it all over the bird. With about an hour left I flipped the bird, breast side up, and poured another stick of butter all over the bird. I basted about every twenty minutes. While the bird was resting, I poured the drippings in a pan, whisked in about a cup if flour, and a pinch of pepper ad sage. This was a huuuuge hit for Christmas!! We normally deep fry our turkeys but this was so, so juicy!!

Addictive Sweet Potato Burritos

This burrito recipe really suprised me. Who knew sweet potatoes could taste like anything but the marshmallowy, brown-sugary goodness they are known and loved for? I used 1 Cup of water instead of 2, 2 Tbls of low-sodium soy sauce instead of 3 Tbls of the regular, and medium whole wheat tortillas. The filling was enough to fill all of the tortillas in the bag with some left over. I now have 10 burritos ready to take for lunch in my freezer. I used black beans which I mashed before adding to the potato mixture. My Mr. scowled at the concoction I was stirring up until he taste-tested the filling. He too is now a fan!

Chicken Pot Pie III

Mine's in the oven right now. I live in Dallas and we just experienced an arctic blast like you wouldn't believe so I was very excited to try this recipe tonight. I used a whole can of cream of chix and cream of celery and subbed three medium sized potatoes, a small bag of carrots sliced 1/2", and about 4 sticks of celery sliced the same way for the frozen, blanched veggies. Boiled those in the broth left over from boiling the chicken until al dente. Mixed the chicken, veggies, and soup together and threw some salt n' pepper, sage, and basil to the mix in addition to the thyme. Smells good. Looking forward to eating it with some warm biscuits!!

Angel Chicken

I LOVE THIS RECIPE!! And so does my boyfriend and his brother. I love making this for nights when I have to work late. The house smells divine when I come home. I used 4-5 chicken breasts instead of dark meat, and let cook for about 8-9 hours on low. Before I leave for work, I sautee chopped garlic and sliced onions, and then add the cream cheese (with chives), cream of mushroom soup, dressing mix, and 1/2 cup of chicken stock. I dump that over the chicken and add one sliced red bell pepper and a whole container of sliced portabellas. I serve over white rice instead of pasta but that's just because I love rice. ENJOY!! :)

Apple Butter Ham Glaze

This was very easy to make. I used the All-Day Apple butter as well. I wouldn't recommend using a smoked ham...I felt like the cmoked flavor over powered the apple flavor. The glaze by itself was wonderful and smelled delicious! I would recommend putting it on more than 30 minutes before your ham is finished (I used a 10 lb ham), and to broil it for 5-10 minutes to help caramelize the glaze.

All-Day Apple Butter

I used this recipe in conjunction with a ham glaze recipe I found on this website made with All-Day Apple Butter, OJ, Worcestershire sauce, and onion flakes. 1st of all, this is the best thing in the whole world to have cooking in your house around Christmas. It just make my house feel (and smell) that much cozier! I did use my hand-mixer to get more of that "apple butter texture" in the end. The ham glaze I prepared only called for some of the apple butter so I put the rest into nicely decorated jars and gave them to my mother-in-law and grandmother-in-law as Christmas presents!
