Greetings, all! I am a full-time working single mom. Cooking is a passion for me, but the greatest barrier is time and energy. I'm a domestic goddess kind of girl, but given that I am a walking DIY (disaster-it-yourself) my home rarely looks heavenly!
My favorite things to cook
The Christmas season is when I can really let me inner baker go wild and crazy - I make dozens upon dozens of treats to box up and give to everyone. My other main cooking focus is massive portion meals that I can divide into tin containers and freeze for easy meals during the week.
My favorite family cooking traditions
The most long-standing family tradition is the classic English roast beef dinner. And turkey dinners too.
My cooking triumphs
Perfecting a replication of the "two bite brownie" through extensive trial and error; coveted and kept the recipe close to my chest!
My cooking tragedies
Obliging when a friend asked for my brownie recipe, only to discover that she passed it off as her own when she needed one for a recipe exchange!

Soft Christmas Cookies
Great recipe. I always use butter, and took the advice of a few and melted it, then adding the sugar to dissolve that a bit. I was lucky enough to have come across a baker's "vanilla butter" emulsion, and I used this in place of vanilla in both the cookie and the royal icing I made to ice them with. Rolled to 1/2" thick and baked at 345F in a convection oven. The result is utterly addictive. Love these cookies! Would make them again in a heartbeat. Thanks for posting this!

Oil Cookies
It is what it says, which I like. Shapes hold well, and it was a blast to make these with kids. I had enough dough to freeze and save for another day of play. I like the simplicity of this recipe, and the comment that they are like scones is right on! They are a softer texture, but for little teeth, this is good. I just dusted them with icing sugar, and while the kids made wild shapes, I stuck with spirals and pretzels that looked charming when done. The taste might be bland, but a solid base for whatever your imagination can create - admittedly, I near tripled the vanilla since I love that flavour.

Butternut Squash Risotto
I'm not a squash fan, but this was amazing! We didn't need all the stock - and actually, as I was a bit short on it, I doubled the wine. I also roasted the squash; overall it got rave reviews, and was just a perfect, delicate sidedish to try. I will be making this again for sure!
