Vegan Davy Crockett Bars

These were SO GOOD!!! At our Xmas cookie party, my Crockett bars were super popular, even though they were the only vegan offering! Following the advice of another reviewer, I cut each kind of sugar by 1/4 cup and added 1/2 cup of applesauce. I also subbed raw sugar for white sugar, of course, to make it vegan. Instead of chocolate chips, I used dried apricots and walnuts. I will definitely be making this one again!

Simple Baked Apples

This came out pretty terrible for me, but I think it's my fault. I tried to make it vegan by substituting turbinado sugar for white and almond milk for whole milk. The sugar didn't melt and get bubbly. The flavor was not delicious. Total kitchen failure. Hope you all have better luck.

Quick Nariyal Burfi (Indian Coconut Fudge)

I'm rating this highly even though it didn't turn into fudge for me (more like sludge), because the flavor was so good. No idea how to actually get it to solidify, but best of luck to you! My house has been using its sludge as ice cream topping for the last week. Yum. I didn't have cardamom, so I seasoned with 1 tsp coriander powder, 1 tsp cinnamon and a sprinkle of ground cloves.

Indian Peanut Stew

This is a very weird dish. It's very fatty and oily because of the peanut butter, which makes it feel kind of decadent to eat. The flavor is just... well, it seems very Americanized. It was edible, but I won't make it a second time.

Basic Cheese Polenta

Nom! I omitted the cheese, as I wanted a low-fat polenta. It was delicious and super easy to make. I used garlic salt, as some reviewers suggested, but next time won't. If it weren't for the garlic, leftovers of this heated up with maple syrup on top would be awesome for breakfast!

Easy Curried Cauliflower

I cut the cayenne down to half a teaspoon and it was still a little too spicy for me, but the flavor was delicious and everyone else in the house loved it. It was quick and easy to make, too, which is always a plus!
