Pumpkin Corn Chowder

Reviewed: Feb. 8, 2011
really liked this soup, although "my version" was a little different...used the leftover canned pumpkin that I had in the fridge and canned corn, added garlic and decreased the onion and peppers by nearly half. Also, I used chicken broth and since the canned pumpkin was already pureed, I left the corn, and peppers chunky for consistency and I like the colors. Lastly, I added some spinach, and used regular milk. Served with sweet muffins and a pork tenderloin. Delicious! thanks!

Quick, Homemade Hamburger Soup

Reviewed: Jan. 29, 2011
Good soup..even better the next day! A very forgiving recipe...I can see how you can change it up per your taste at the time, or the ingredients you have on hand. I used ground turkey instead of beef, omitted the green beans, used fresh carrots, and added onions and garlic. Turned out great! thanks!

Traditional Russian Pirozhki

Reviewed: Mar. 9, 2011
So glad to have found this yummy recipe! I altered it to make it taste like the pirozhki's I have had at the Bite of Seattle... include ground meat, and a cheddar cheese square in each "pouch.", omitted the egg, just a very little cabbage. Next time, I will try the traditional version, to see what that is like. Used an egg wash (beaten egg with a little water) to paint on before baking...came out shiny and pretty! I also halved the recipe...still made 15!

yum these turned out great for our hawaiian dinner party. It was 25 degrees outside, so opted to make them in the oven...broiled them on soaked skewers for 3-4 minutes per side. basted with some extra sauce that I made on the stove top and thickened with cornstarch. Everyone loved them. Added green peppers and onions. thanxs!

Chococonut Chip Cookies

Reviewed: Dec. 11, 2010
Took these with us to a friends for dinner last night..they vanished off the plate! Good solid recipe, and I think you could add to it according to your liking. Next time, i will add a little oatmeal for some texture, and a little extra coconut so the flavor really comes through. Thankx!

Greek Lemon Chicken Soup

Reviewed: Nov. 21, 2010
Good recipe, although, a little too "lemony" for my hubby. I added zucchini slices and sliced rather than shredded carrot. Halved the butter and flour, and used couscous since I didn't have orzo on hand...just halved the amount since the couscous swells a bit when it cooks. Enjoyed it myself though, and it was good for the kids since they're fighting colds! Might try it again in the summer as a light side soup. Thanx for sharing!

Buttermilk Syrup

Reviewed: Jan. 5, 2011
I never knew it could be so easy to make syrup at home! I used sour milk (vinegar and milk) since I didnt have buttermilk...it turned out fabulous! Dont' think I'll ever buy syrup again! Used it for pancakes this time, next time, I think it'll be a great topping for ice cream! keep in mind...it does bubble up quite a bit! Use a large pot to accomodate. yum.. thanks!

Mexican Chocolate Cake

Reviewed: Aug. 2, 2010
Easy and delicious! Followed dreamysweets variatiion, loved the pour on frosting. Decorated with strawberries to set it off ( the first time) The second time, I decided not to use strawberries since even thought beautiful, they don't really tie in with the cake flavors to me. Very moist and rich. I reduced the white sugar by 1/2 cup and rplcd it with brown, also, added a dash of nutmeg. Oh, and I used a bundt pan, which increased the cook time by 15 minutes, and greased and "floured " it with chocolate powder. GREAT! Thanks..this ones a keeper!

Easy Salsa Meatloaf

Reviewed: Nov. 27, 2012
Nice easy recipe. Kids seemed to like it, which is always good. Used ground turkey and topped with a spicy ketchup glaze the last 15 minutes. (Brown sugar, red pepper, ketchup and dried mustard) May use a tad more salsa next time to up the flavor, and this time I used parmesan but, I think I will try the cheddar , which is probably a good idea since I use lean turkey. I always let the meatloaf rest for about 5 or ten minutes before cutting into it to let the juices calm down so it doesn't dry out. Thanks for the recipe!

Orange Soy Pork Loin

Reviewed: Jul. 24, 2012
flavorful. And it makes alot. Plenty of leftovers after our group of 4 adults and two kids had dinner. Used foil instead of a bag, and omitted rosemary. Wanted to make a gravy, buy alot of the drippings evaporated before I could. Very tender. Served with rice, corn on the cob and green salad. thanks!

Pumpkin Pancakes

Reviewed: Feb. 2, 2011
definitely a new favorite for me and the family. Yum. Had breakfast for dinner tonight, and they turned out great! Only changes I made...I went a little heavy on the spices, added a tsp of vanilla, a tablespoon of molasses, and divided the flour to include 1 cup whole wheat. It is a VERY THICK batter, but, i didn't thin it out...just spread it into a circle with a spoon on a hot, oiled griddle. DELISH! thanks!

Sopapilla Cheesecake Pie

Reviewed: Aug. 2, 2010
Very easy to follow recipe and it was a hit at the Mexican themed dinner party I took it too. Sweet on it's own..didn't really even need the honey, but it adds to the presentation..my cake pan was MIA, so I rolled the cresent rolls into a big cicle and patted them into a pie plate. Used about half of the cinnamon butter topping..and could have even used less. Great recipe overall...next time I may add some slivered almonds or a ribbon of cinnamon through the pie. THANX!
