Easy Salsa Meatloaf

Reviewed: Nov. 27, 2012
Nice easy recipe. Kids seemed to like it, which is always good. Used ground turkey and topped with a spicy ketchup glaze the last 15 minutes. (Brown sugar, red pepper, ketchup and dried mustard) May use a tad more salsa next time to up the flavor, and this time I used parmesan but, I think I will try the cheddar , which is probably a good idea since I use lean turkey. I always let the meatloaf rest for about 5 or ten minutes before cutting into it to let the juices calm down so it doesn't dry out. Thanks for the recipe!

Orange Soy Pork Loin

Reviewed: Jul. 24, 2012
flavorful. And it makes alot. Plenty of leftovers after our group of 4 adults and two kids had dinner. Used foil instead of a bag, and omitted rosemary. Wanted to make a gravy, buy alot of the drippings evaporated before I could. Very tender. Served with rice, corn on the cob and green salad. thanks!

Too Much Chocolate Cake

Reviewed: Apr. 20, 2011
Chocolatey goodness, YUM, and beautiful too! Powdered sugar on top, and a scoop of vanilla ice cream and your set! Company loved it, and so did the cook. :) So, so moist. I may try to halve the oil and increase the sour cream next time...the guilt almost too great after eating it...I will post again and let you know how it turns out!

Traditional Russian Pirozhki

Reviewed: Mar. 9, 2011
So glad to have found this yummy recipe! I altered it to make it taste like the pirozhki's I have had at the Bite of Seattle... include ground meat, and a cheddar cheese square in each "pouch.", omitted the egg, just a very little cabbage. Next time, I will try the traditional version, to see what that is like. Used an egg wash (beaten egg with a little water) to paint on before baking...came out shiny and pretty! I also halved the recipe...still made 15!

Reviewed: Feb. 21, 2011
Great recipe for a novice turkey chef like myself! I was a bit intimidated by this big ol bird..but this recipe made it easy! Used less butter than called for and it still turned out great. Plenty of leftovers for soup and tacos! thanx!

Pumpkin Corn Chowder

Reviewed: Feb. 8, 2011
really liked this soup, although "my version" was a little different...used the leftover canned pumpkin that I had in the fridge and canned corn, added garlic and decreased the onion and peppers by nearly half. Also, I used chicken broth and since the canned pumpkin was already pureed, I left the corn, and peppers chunky for consistency and I like the colors. Lastly, I added some spinach, and used regular milk. Served with sweet muffins and a pork tenderloin. Delicious! thanks!

Pumpkin Pancakes

Reviewed: Feb. 2, 2011
definitely a new favorite for me and the family. Yum. Had breakfast for dinner tonight, and they turned out great! Only changes I made...I went a little heavy on the spices, added a tsp of vanilla, a tablespoon of molasses, and divided the flour to include 1 cup whole wheat. It is a VERY THICK batter, but, i didn't thin it out...just spread it into a circle with a spoon on a hot, oiled griddle. DELISH! thanks!

Chocolate Chip Oatmeal Cake

Reviewed: Jan. 31, 2011
This was a very moist cake..delicious warm. I had to use extra cocoa powder to make up for the fact that I was short on chocolate chips...next time, I may add a little more sugar since I found the sweetness was pretty mellow. Overall, a good recipe and a unique cake! thanks

Quick, Homemade Hamburger Soup

Reviewed: Jan. 29, 2011
Good soup..even better the next day! A very forgiving recipe...I can see how you can change it up per your taste at the time, or the ingredients you have on hand. I used ground turkey instead of beef, omitted the green beans, used fresh carrots, and added onions and garlic. Turned out great! thanks!

Whole-Wheat Chocolate Chip Cookies

Reviewed: Jan. 9, 2011
yum. This is gonna be a staple around here I can tell ya right now! Couple changes...used butter instead of margarine, used 1.5 cups milk chocolate chips instead of 2 cups of semi sweet, and used all whole wheat flour. Also, I had to bake it quite a bit longer, since i used a 9 1/2 x 13 glass pan...it probably took a total of 30mins. thanx!

Buttermilk Syrup

Reviewed: Jan. 5, 2011
I never knew it could be so easy to make syrup at home! I used sour milk (vinegar and milk) since I didnt have buttermilk...it turned out fabulous! Dont' think I'll ever buy syrup again! Used it for pancakes this time, next time, I think it'll be a great topping for ice cream! keep in mind...it does bubble up quite a bit! Use a large pot to accomodate. yum.. thanks!

yum these turned out great for our hawaiian dinner party. It was 25 degrees outside, so opted to make them in the oven...broiled them on soaked skewers for 3-4 minutes per side. basted with some extra sauce that I made on the stove top and thickened with cornstarch. Everyone loved them. Added green peppers and onions. thanxs!

Serbian Ground Beef, Veggie, and Potato Bake

Reviewed: Nov. 28, 2010
yum. good dinner tonight...made a few changes...omitted the red pepper (for the kids), used chicken bouillon (it was what I had on hand), added worcestrshire sauce, 2 cloves garlic, and a sprinkle of nutmeg rather than cloves. Also diced carrots and bottom layer of potatoes, rather than shred and slice. Reminds me a little of shepards pie. I will make this one again for sure. thanks!

Ninety Minute Cinnamon Rolls

Reviewed: Nov. 22, 2010
WOW! These are quick, easy and delicious! I will DEFINITELY make these again! They were good without the frosting, but I did top half of them with a store bought vanilla frosting...the fam loves them. One note....Put the muffin tins on a cookie sheet, or place a cookie sheet below them...they puff up and overflow! (but worth the mess.) :) thanks for sharing!!!!!
