Maria's Pepper Steak

Easy to make with a limited amount of ingredients. I added some grated ginger, but I think the beef could be pre-seasoned with some pepper of Chinese 5 spice seasoning. I may try that next time. Overall, good solid recipe.

Pesto, Goat Cheese, and Sun-dried Tomatoes Quiche

I did not measure the pesto or goat cheese. I coated the bottom of the crust with pesto and added 1/2 log of goat cheese from Costco. I added a few sliced sun dried tomatoes on top and then added the egg mixture and topped with sun dried tomatoes and some fresh basil. I liked it, but my husband gave it a thumbs down. I think when he heard goat cheese was in it, that did it!

Apple Pork Chops

Very tasty and wonderful aroma while cooking. I followed suggestion of one of the reviewers by adding orange juice instead of water. I also added cinnamon and 2 Tablespoons of flour. I sliced some sweet potatoes and added them to cook along with the pork chops. Served with a side of baked beans. Everyone loved it!

Gumbo Style Chicken Creole

Good, easy recipe. I did omit the mushrooms and added celery. The consistency was a little dry so I added some chicken broth.I brought it up a notch in seasoning, using cayenne instead of hot sauce. I also added a little Creole seasoning. We'll be celebrating Mardi Gras with it tonight!

Cajun Potato Soup

The basic recipe is very good, however I added a few things - chopped celery, green onions, Italian parsley, cajun seasoning, and Tabasco. My family said this was a "keeper:. I served it with Garlic bread with parsley and cheese.

Pumpkin Gingerbread

Easy recipe that makes the house smell wonderful! I, too, lowered the baking temperature to 325 and cooked about 10 minutes longer for 2 standard loaves. Did not burn or dry out.

Russian Green Bean and Potato Soup

This soup is a great entree for "meatless Monday". I added carrots, garlic, and a little leftover vegetable medley. I served it with rye bread. My husband and son gave the recipe a "thumbs up" as did I.

Homesteader Cornbread

This cornbread is very light and delicious. My husband really liked it and ate 2 pieces - he usually is not too fond of my cornbread! I, too, increased the cornmeal to 2 cups and decreased the flour to 1 1/2 cups as recommended by other reviewers.

Cajun Baked Catfish

This is any easy, delicious way to prepare catfish. I soaked the fish in milk and used olive oil instead of canola, garlic powder instead of garlic salt, and 1 tsp dried thyme. I also substituted 1/2 tsp lemon pepper for the pepper and added a little Old Bay Seasoning. My baking time was a little over 15 minutes. I served it with a side of garlic-rosemary potatoes. It was a winner with my family!
