The Best Bean and Ham Soup
Delish! Didn't have the ham hock and only used homemade vegetable stock and thyme for depth. Omitted the tomatoes and added shredded Swiss chard at the end. The soup was so creamy and soothing.

Best Butternut Squash Soup Ever
Delish! Sauteed celery and carrots with the onions, then added some canned chickpeas after partially pureeing to leave some chunks. Drizzle with some olive oil to serve. The textures keep it from looking like baby food. :)

Smoked Salmon Vodka Cream Sauce
Fabulous! DH inhaled his portion in 5 minutes flat. To cut down on fat, I subbed half & half for cream and increased the tomatoes. The canned tomato sauce was extremely salty -- the whole dish ended up slightly too salty, even though no extras were added.
