Roasted Romanesco

This is a great simple recipe that I used to get rid of the extra veggies from a pot luck. I brought veggies + dip and there always seems to be leftover broccoli and cauliflower. I used this easy simple flavorful recipe to roast the veggies and they were great. My 9 and 5 year old boys loved it. Thanks for sharing!

Caramel Heavenlies

I have made this probably a dozen times. Use ***PARCHMENT PAPER*** on top of the cookie sheet rather than foil to alleviate problems of stickiness from the bars to the cookie sheet. It is carried in grocery stores the same area as foil. There is no need to spray parchment paper. The cookies will peel off easily once cut with a pizza cutter. I recommend at a minimum having 1 cup butter and 1 cup brown sugar for the sauce. I Also used 3 cups of marshmallows. Every time I make these they go fast. There is always a demand for the recipe. Thank you so much for submitting such an easy crowd pleasing treat!!

Banana Cake VI

I made this cake for a class of 8-10 year old children. Overall we had 25 that loved it and 5 that hated it, mostly from those that dislike bananas.

To Die For Blueberry Muffins

This is the best blueberry recipe I have tasted. My family is crazy about them. There is no need for vanilla. It is perfect just the way it is written. Give it a shot, you wont be disappointed.

Broiled Tilapia Parmesan

I thought this was an excellent recipe. I made it as directed but added as many suggested a dash of garlic and onion powder and old bay seasoning. I did use the full amount of fresh lemon juice and found it to be quite tasty. This is a keeper. Thank you for sharing.

Ginger Glazed Mahi Mahi

I gave this a 5 star rating not only for taste but my 7 and two year olds ate it. I added minced purple onions which when I baked it in the oven caramelized and tasted beautifully. I doubled the sauce, but left the honey at 3 tbs as it tasted sweet enough for me. I baked it at 350 for 30 minutes which I think was a bit much. Next time I will check it at 25 minutes. Thanks for the recipe. Its a keeper!

Baked Kale Chips

My husband and I both enjoyed these chips. I salted them well and they had a nice crunch. My seven year old thought they were o.k., the two year old spit them out. As for cooking time, my batch was done in 11 minutes and cooked perfectly but I watched them like a hawk like other reviews suggested.

Thanksgiving Leftover Casserole

This was a great recipe. I did not have potatoes on hand so I substituted creamy risotto rice cooked in chicken broth. It turned out great. I agreed with another rater to add spices so I added thyme, rosemary, and sage approx 1 tsp each. I added sauteed garlic 1 tsp and 1/2 onion to the evaporated milk. The dish was easy to cook and turned out beautifully. I would still increase the spices, onion, and garlic as it was delicious but a little too subtle. Kids age 2-6 loved the dish. I would make this again. Next time I think I would add some frozen peas.
