Broccoli Chicken Roli

I had saved this recipe a while ago and finally got around to making it. But, when the time came, I couldnt get on the computer to check it all out, so I just improvised. I used chopped ham from a ham steak, french-cut green beans, a small can of mushrooms, a little prepared mustard, chopped onions, and my own seasonings. I then brushed the finished product with butter, a little more seasoning, and bacon bits. I baked it about 15 minutes and it was perfect!! I wish I had made 2 because this was literally gone in less than 5 minutes. I will definitely be making this again. the possibilities are endless. I'm gonna make this tomorrow night with leftovers from Thanksgiving...YUM!!

Sweet Potato Pie I

I made this pie for Thanksgiving, and it was a huge hit. I did follow the suggestions and I used evaporated milk instead of regular milk. I added a 1/4 tsp of cloves and ginger and 2 tbsp of lemon juice. I also added a 2 tbsp flour to the mixture to thicken up a bit. Last, I halved the white sugar and replaced with brown sugar. I know these changes changed the taste of the pie, but I'm sure its a delicious pie regardless. this was just for personal preference. Also, I made a quick graham cracker crust because I was pressed for time, and it complimented the pie wonderfully. I will definitely be making this pie again and again. thanks!

Roasted Garlic Mashed Potatoes

Delicious! Try making this with red potatoes (skin on)....very good! Also, I added a little romano cheese and oregano to the potatoes before mixing all-together. Try it, you wont be sorry!!

Pumpkin Dip

I cannot come up with the perfect word to describe how delicious this dip was! I made it for a family event tonight, and it got rave reviews from everyone! I normally dont change recipes, but I did this time only because I thought the dip was a little too thin for my liking. So, I whipped up about a cup of heavy cream, to a very thick whipped topping, added a little more powdered sugar and 1 tsp of vanilla, and folded it into the dip, and it was perfect! I'm not sure if it changed the overall flavor or not (from the original recipe), but I will definitely make it this way from now on. It was so deliciously addicting, it was crazy! My SIL kept telling everyone not to eat it, that it was nasty and gave you the poops...just so that no one else would eat it, and she could have it to herself! LOL! But, it didnt work. Everyone went nuts over it! I have several people that asked for the recipe. It seemed to taste a lot better after the ingredients had time to meld with each other. So, make it at least a few hours ahead and chill in the fridge until served. I will definitely be making this again and again. Thanks for the recipe!

Easy Decadent Truffles

These were delicious!! A huge hit at the party I brought them to tonight. I actually let the mixture sit in the fridge overnight, right up until the following afternoon...and they rolled SO much easier. I tried to make them after 1 hr in the fridge, and they just melted all over my hands. So glad I decided not to give up on these. They were a lot of fun to make. Everyone loved them. Will definitely make again and again. Thanks for the recipe!!

Iced Pumpkin Cookies

I made these cookies last night, and I thought they were OK. But, today...they were outstanding! Definitely a "next day" cookie. They kept nice and soft right out on the counter. I only make changes to recipes depending on what I have on hand. Since I only had a can of pumpkin pie mix in my cupboard, I omitted the cinnamon, nutmeg and cloves. They were a HUGE hit. I'm making them again tonight because they're all gone, lol! I did add cinnamon to the icing recipe...very yummy. Thanks for this recipe!

No Bake Cookies V

OH MY GOODNESS!! I have been craving these cookies for a long time, but never got around to making them. After sorting through the many recipes on the site, I chose this one. And boy, am I sure glad I did! I was out of butter, so I substituted butter flavored spry (Crisco)...and that was the only change I made. Followed the rest exactly...and made sure it was a ROLLING BOIL before I started the 1 minute timer. These came out perfect! I will be making these all the time. Thanks so much for his recipe!! A huge hit in my home!!

Award Winning Soft Chocolate Chip Cookies

OK, I usually make things to the TEE...but, I had to change this recipe a bit because of what I had on hand. I only had one box of instant pudding on hand, and it was chocolate, so it was minus 1 box. I added about 3/4 c. of peanut butter to add a little more flavor to make up for the missing pudding mix. These cookies were awesome! They came out chocolaty with just a hint of peanut butter. They definitely need a very cold glass of milk to go with them, lol. Almost cake-like. I will be making these again, making sure I have every ingredient first, just to see if its possible that these can taste any better! Thanks for the recipe :o)

Cheesecake Supreme

I cannot rate this high enough....it deserves 100 stars! I followed all the reviews and double foiled my pan, baked in a water bath on bottom rack at 200 degrees for 3hrs and 10 mins, let cool with the door cracked for 2-3 hrs, and chilled for 24 hrs. Not even the littlest crack! The top was as smooth as glass....and the taste brought me back home to NY. This will definitely be my cheesecake recipe from now on. It didnt even last through the day before it was gone, and a request for another came in, lol. I made a delicious blueberry sauce for the top, and it was excellent!! Thanks for this great recipe!!

Excellent recipe!! I am the type of person that can never get a boxed brownie to turn out perfectly. But this recipe has convinced me that it CAN be done from scratch! Delicious and rich. Received many compliments. Some even said it was the best brownie they have ever tasted. Followed the recipe to the T. This is our new brownie recipe for life! Thanks!

Pecan Pie V

Delicious!! Made no changes to the recipe except the cooking time. Cooked for 15 mins on 350 then lowered to 300 for 55 mins. Came out perfect! I'm going to make one for my FIL with Splenda because he's diabetic. Pecan pie is his favorite...but its so loaded with sugar that he can no longer eat it. He's gonna be so happy!! Excellent recipe, thanks Elaine!!

Old Fashioned Coconut Cream Pie

Very good! It didn't set as well as I had hoped, but served the purpose. I think next time I will add 1 more egg. I made it late last night before bed for my fiance to enjoy when he got home from work this morning (midnight shift). When I got up, half the pie was already gone! He's a very picky man, and likes the basics, nothing fancy. For him to like it, it had to be good! Per reviewers' suggestions, the only changes I made were to sub the vanilla with coconut extract, 1/3 cup of cornstarch for the flour, and 1 can of coconut milk and the rest half-and-half to make up 3 cups. But I'm sure this would have been just as tasty as is. For those that have never bought coconut milk (like me)...I searched forever for it in the baking aisle and the dairy section, only to find it in the Asian food aisle! I didn't know that's where it was. I almost gave up looking for it! Anyway, thumbs up for this delicious pie. Very rich and delicious. Will be making it again and again.

Garlic Mashed Potatoes Secret Recipe

Like this recipe needs another review, but I have to comment. I scaled this recipe down to 5 servings, and followed it to the T. Excellent!! This puts mashed potatoes everywhere to shame. Even my fiance loved them...and he's very picky. He doesnt like anything out of the ordinary...just a basic meat and potatoes kinda guy. But, he ate 3 servings of these, and was upset when they were gone! I made it as a side to my own meatloaf recipe (Karie's Meatloaf). They went together perfectly!! I dont understand why people completely change a recipe and then rate it to THEIR changes. Or comment saying it was too much of this or that. They know their own tastes. So if a recipe calls for a certain amount of something, and they know they dont like it...lessen the amount to your families tastes! Try this recipe...you wont be disappointed! I will never make regular mashed potatoes again :o)

Crispy Fried Chicken

Wow! Definite 5 stars. Thanks so much for the "Fried Chicken 101" class. Had I not read it, who knows how many more years I would have went without trying it myself. Great tips! I have been cooking for many years, but this is one thing I always left to the southern folk (I'm originally from NY). I was always afraid the coating would fall off, or it would burn while the inside was still raw...so I never attempted to make it. Well, I'm happy to say, I did exactly what you said, followed the recipe exact (except adding a few of our fav spices), cooked it at around 350 degrees, and came out with the most beautiful fried chicken! (I've added a photo). The "waiting" time was excruciating, lol...but well worth it. My fiance' LOVED it, and I almost didnt want him to eat it because it was so pretty, lol. Fried chicken is his favorite. He's southern, so you can see why I always get scared to try new things when it comes to southern cooking. Anyway, I showed the pic to a few friends and they all said it looked delicious! Thanks so much for this recipe, and the tips! You made it MUCH easier for me to try this :o)

Nana's Molasses Cookies

Whenever I'm missing my late Grandma, I whip up a batch of these cookies. I had this stuffed away in my personal recipe book, and thought I lost it during a move. I looked everywhere! Finally found it in my MIL's cupboard. So glad I found it so that I could share it with you all. Hope you like them as much as we do!

Blueberry Cream Cheese Pound Cake I

I just made this pound cake, and we couldnt even wait for it to completely cool off before we tried it! It smelled so delicious cooking in the oven! My 3 yr old is already on his 2nd piece! I've already sent this recipe to 2 friends, and I know they'll be more requests for it once I start telling everyone how good and moist it was! I made it with a lemon cake mix, only because thats what I had on hand, and that was the only thing I changed. I also sprayed the bunt pan, then sprinkled a couple tsps of regular sugar in there and tapped it around to coat the pan. Made a delicious sweet crust on top. Then I made a blueberry glaze to drizzle on top out of 1 c. of confectioners sugar and 2 tbsp's of the juice I drained from the blueberries. Definitely a keeper! Thanks so much for this recipe!

Bread Pudding II

A+++++ ...I have made bread pudding for years, and lost my recipe book with all my favorite recipes a while back during a move. I'm slowly remaking it, with lots of searching. I remembered the ingredients, but not the measurements...so I've been looking all over and narrowing it down to my final choice. And this is it! I didn't change a thing in this recipe. I did have to double it to make a 9x13 pan, like you have to do. An 8x8 pan just isn't enough, LOL! I accidentally added too much cinnamon because I was on the phone and not paying attention, lol...but it turned out delicious anyway. My fiance' likes it, so that means its good! He's already ate over half the pan since this morning! Thanks so much for this recipe, Ellen, it's already been added to my new recipe book.

Fruit Cobbler

Now I know why your son won 1st place with this recipe. It should get 1st, 2nd and 3rd because no other recipe can come close to the deliciousness his one has! I've always made a cheater type of cobbler with a cake mix and fruit...and it was good enough to not look for one from scratch. Plus, I am all about "easy" recipes...the less work, the better. But, I came across this one a few days ago, and decided to make it last night. And I'm happy to say I will NEVER make another cobbler recipe besides this one again. It's phenomenal!! And it really wasn't any more work than my "cheater" recipe. My fiance works nights, and gets home very early in the morning, and he found it in the fridge. Needless to say, he left me 1 helping (a small one at that) for when I woke up, lol. I used canned peaches since I didn't have fresh on hand, and I cannot imagine this tasting any better had I used fresh! I added a mixture of flour, brown sugar and butter to make a crumbly topping on this, and no other changes, and added it during the last 30 mins of cooking. It turned out perfect! I wouldnt change a thing. Thanks so much, Lenna, for this easy and delicious recipe! It's definitely a keeper!

Sauteed Apples

I'd give this recipe 100 stars if I could! Its not only delicious, its super easy! I did as others suggested by adding 1 tsp cinn., 1 tsp vanilla and just a dab of nutmeg, only because we love all those ingredients. I made the apples last night to go with Apple Stuffed Pork Chops from this site, and green beans as a vegetable. I let them cook in my electric skillet on "warm" the entire time my pork chops cooked, only to make the apples nice and soft, and the syrup nice and thick. I could definitely eat these by themselves all day long. I have the pickiest 3 yr old son that wont eat anything if he hasn't tried it before. So, I "sneak attacked" him and put some of the syrup on his lips, LOL! After tasting how delicious it was, he devoured a bowlful! I am going to make a triple (or more) batch later this week and serve them on my homemade Belgium waffles, and pancakes. I'm also going to experiment by grinding this up to spread on toast. I'll let you know how it goes! Thanks so much for this easy recipe...it was a hit! It definitely goes into my permanent cookbook.
