My favorite things to cook
I love to cook all varieties of food, mostly comfort foods and baked goods. I like to experiment with things I have on hand to see what I can come up with.
My favorite family cooking traditions
We do the usual holiday traditional feasts. And even have bbq's in the snow. But, I'm hoping to find some new and interesting traditions to start for my own family, that I can pass down to my children.
My cooking triumphs
I guess I would have to say the year I won a chili contest back home in NY. I honestly didnt think I would even place, and joined just for the fun of it. Since then, I have tweaked my recipe to be exactly what everyone loves! If I actually knew the measurements, (I always eyeball everything I add), I'd share it with all of you. But, I'm thinking about taking this one to the grave ;o)

Broccoli Chicken Roli
I had saved this recipe a while ago and finally got around to making it. But, when the time came, I couldnt get on the computer to check it all out, so I just improvised. I used chopped ham from a ham steak, french-cut green beans, a small can of mushrooms, a little prepared mustard, chopped onions, and my own seasonings. I then brushed the finished product with butter, a little more seasoning, and bacon bits. I baked it about 15 minutes and it was perfect!! I wish I had made 2 because this was literally gone in less than 5 minutes. I will definitely be making this again. the possibilities are endless. I'm gonna make this tomorrow night with leftovers from Thanksgiving...YUM!!

Sweet Potato Pie I
I made this pie for Thanksgiving, and it was a huge hit. I did follow the suggestions and I used evaporated milk instead of regular milk. I added a 1/4 tsp of cloves and ginger and 2 tbsp of lemon juice. I also added a 2 tbsp flour to the mixture to thicken up a bit. Last, I halved the white sugar and replaced with brown sugar. I know these changes changed the taste of the pie, but I'm sure its a delicious pie regardless. this was just for personal preference. Also, I made a quick graham cracker crust because I was pressed for time, and it complimented the pie wonderfully. I will definitely be making this pie again and again. thanks!

Roasted Garlic Mashed Potatoes
Delicious! Try making this with red potatoes (skin on)....very good! Also, I added a little romano cheese and oregano to the potatoes before mixing all-together. Try it, you wont be sorry!!
