Fudgy Brownies I

Great basic fudgy brownie! I did a cream cheese topping and the not-too-sweetness of the brownies worked perfectly! These are moist and not at all fudgy. Note though: when following the first few steps the batter looks...weird. Then you add the eggs and other oil and it's great, but something to be aware of! Also I used an 8x11 because I wanted them extra thick - yum!

Fluffy Pancakes

This was AMAZING! I followed (nearly) everyone's tip of doubling the recipe and you definitely need to; doubling made about 8-10 good size pancakes and we only had two leftover. I did separate the eggs and whip the whites (just a bit - by hand with a whisk) and then folded those in as the last step and let it sit for 5 minutes before frying them. So good! Better than any other pancakes I've had anywhere!

Butternut Squash Risotto

Firstly, this recipe IS tasty - I added quite a bit of pepper and almost half a cup of cheese, not the 1/4 called for. But I gave it three stars because the proportions are off for sure. I ended up adding about 1/4 cup MORE rice to soak up all that stock and this recipe is HUGE - I'm giving some away because even with leftovers, there's only 3 of us in my household and there's no way we can finish it off. Also, it does not take 35 minutes to cook. Took me closer to an hour!!!! This is not a quick weeknight meal addition. Give yourself some time for this one. The taste is good but realistically is subjective to how much cheese/salt/pepper and what kind of squash (freshly roasted/store bought chunks/frozen) you use.

Buttery Soft Pretzels

These are so wonderful!!! Slightly sweet, slightly salty and warm and soft - perfect! I do change up the recipe just a bit. I use 3.5 cups of flour, bake at 400F for 8 minutes and butter them immediately out of the oven. Also, if you find that folding the pretzel 'shape' is difficult, make little swirls and call them 'pretzel snails' - my 4 y/o loves them!

Italian Chicken with Garlic and Lemon

This has serious potential but first, a warning; you must LOVE lemons for this. 5 lemons is a lot! Also, I took the advice from others and fried my chicken up a bit to give it color. I sprinkled some italian seasoning on them first. Also finished them off with a touch of paprika for a little smoky finish, After frying everything, I DRAINED all the oil but saved 2 tbsp, left that in the pan with the bits, deglazed with sweet vermouth and then added the seasonings, garlic and lemon juice. Instead of 5, I will do 3 (maybe 2 if large) lemons. Baked at 350 for about 45 minutes and it was fine. My toddler did like it with five lemons but my nephew and brother and husband found it incredibly tart. All in all, decent but needs a little love.

Sunshine Chicken

This is a fantastic recipe and SO easy with a great taste! I added a PINCH of cayenne pepper and a little ginger as I was worried it would be too sweet and it was still great. Also a few under the broiler made it extra crispy - a definite winner!

Sweet Dinner Rolls

This recipe is AMAZING! I followed summer_lover's directions since I don't have a bread machine and I cannot believe how wonderful they are! Great when served with a chili that has some heat behind it - I never have any left!

Sunday's Apple Pie

Absolutely fantastic!!!! If you double the recipe it can make 3 pies that are winners! I did add nutmeg to flour/sugar mixture and also put 1/4 tsp of vanilla on top of the apples once they were in the pie shell. Will be using again and again - thanks!
