Baked Salmon II

Excellent recipe! My husband loved this salmon! I baked 4 fillets and so tripled the ingredient amounts. Proportionally, though, I did add less sea salt, pepper, and olive oil. More fresh garden parsley and dill was added. The salmon was baked in a dish covered by aluminum foil. Cooked marinade in the pan was wonderful over rice. Will make this again! Cheesy Onion Focaccia

Great flavor! I used half whole wheat flour but needed to add more (probably had too much water). Remember to allow dough to rise on baking pan and not in mixing bowl (as I did)! 3 T olive oil was plenty to caramelize the onion. I added garlic near the end to avoid burning. Used fresh garden dill, thyme, and parsley as well as dried rosemary, oregano, and chili pepper flakes instead of italian seasoning. Husband loved it!

Thai-Style Peanut Sauce with Honey

Excellent and so easy! I followed the recipe as written except for substituting safflower oil for sesame, because I did not have sesame oil. As one reviewer suggested, a little squirt of lime juice added a nice tang. My husband 'Mmmmm'ed the whole time he ate his peanut pad Thai. I cooked some rice noodles and mixed them with this sauce, green onion, water chestnuts, carrot slices made with the vegetable peeler, and fried tofu. Thank you Jeramyn! This one will be made again!

Potato Latkes I

Delicious! Brought me back to my mother's German kitchen. Without a cheesecloth, used my hands to squeeze out the moisture from the potatoes. As suggested, I increased the amount of onion to 2 T. or more and reduced the eggs to 2. The salt was also reduced a bit, and I added some McCormick garlic and table herb seasonings. Safflower oil was used in place of peanut. These are great hot and eaten cold as leftovers. Will definitely make again!
