Honey Mustard Dressing II

Reviewed: Jul. 24, 2012
This was a simple & great honey mustard dressing. My modifications: DIJON mustard makes all the difference, also for a thinner dressing, I substituted half of the mayo for a few tablespoons of olive oil!

Strawberry Rhubarb Coffee Cake

Reviewed: Jun. 8, 2010
Absolutely Fabulous! I made this and took it to work for a staff meeting, I had alot of requests for the recipe. I did make more of the filling, I used 3 cups rhubarb, 2 packages of strawberries, 1 cups sugar, 1/2 cup cornstarch, 2 Tbsp. Lemon Juice.

Brazilian Chicken with Coconut Milk

Reviewed: Apr. 20, 2010
This was good, I followed some suggestions from previous reviews and diced the chicken. This recipe also needs some salt added to taste. I served it over baked potatoes with some cheddar cheese melted on top. It was liked by all.

Homemade Applesauce

Reviewed: Nov. 15, 2009
A nice twist to this applesauce is the citrus that is added. Not overly sweet, just perfect!

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette

Reviewed: Oct. 20, 2009
I thought the dressing had too much olive oil, I would cut back on that next time. I loved the citrus flavor in the dressing and the salad ingredients worked really well with the dressing.

Corrigan's Minestrone

Reviewed: Oct. 15, 2009
Very easy to make, I used a little more vegetable broth than stated (double) to give it a little more flavor, I will definitely make this again.

Curried Butternut Squash & Apple Soup

Reviewed: Oct. 11, 2009
This soup is so creamy, and has a little bit of heat at the end with the curry powder. Serve with baguette slices for dipping!

Moroccan-Style Stuffed Acorn Squash

Reviewed: Oct. 7, 2009
This was very good. I omitted the raisins and didn't have garbanzo beans, so I used navy beans, still tasted great and went very well with the squash. A little parmesan cheese added another layer of flavor.

If you like things more spicy, add more of the curry paste or red pepper flakes.

Cake was a little dry, I thought it would have a stronger root beer flavor.

Strawberry Vanilla Pancakes

Reviewed: Aug. 25, 2009
I agree, too much salt, I would cut back to half the amount. I liked the addition of vanilla and brown sugar to this recipe, it really added another level of flavor to the pancakes. You could easily add blueberries in place of the strawberries.

I made this for my mother-in-law, she likes her food very basic, it was a nice recipe, watch out as to not add to much salt to this recipe.
